Categories     main-dish

Time 1h

Yield 4 servings

Number Of Ingredients 10

1/4 cup good olive oil
3 tablespoons minced garlic (9 cloves)
1/3 cup dry white wine
1 tablespoon grated lemon zest (2 lemons)
2 tablespoons freshly squeezed lemon juice
1 1/2 teaspoons dried oregano
1 teaspoon minced fresh thyme leaves
Kosher salt and freshly ground black pepper
4 boneless chicken breasts, skin on (6 to 8 ounces each)
1 lemon

Steps:

  • Preheat the oven to 400 degrees F.
  • Warm the olive oil in a small saucepan over medium-low heat, add the garlic, and cook for just 1 minute but don't allow the garlic to turn brown. Off the heat, add the white wine, lemon zest, lemon juice, oregano, thyme, and 1 teaspoon salt and pour into a 9 by 12-inch baking dish.
  • Pat the chicken breasts dry and place them skin side up over the sauce. Brush the chicken breasts with olive oil and sprinkle them liberally with salt and pepper. Cut the lemon in 8 wedges and tuck it among the pieces of chicken.
  • Bake for 30 to 40 minutes, depending on the size of the chicken breasts, until the chicken is done and the skin is lightly browned. If the chicken isn't browned enough, put it under the broiler for 2 minutes. Cover the pan tightly with aluminum foil and allow to rest for 10 minutes. Sprinkle with salt and serve hot with the pan juices.

CHICKEN BREASTS WITH LEMON

Chicken Breasts With Lemon image

In this recipe, which Pierre Franey brought to The Times in 1992 in one of his 60-Minute Gourmet columns, two teaspoons of lemon zest are added to a simple sauce of lemon juice, thyme, garlic and shallots. It is, at once, lively and elegant. To round it out, it needs a sturdy accompaniment. Mr. Franey suggested mashed potatoes with garlic and basil, with just a little olive oil swirled in.

Time 25m

Yield 4 servings

Number Of Ingredients 11

1/2 cup flour for dredging
Salt and freshly ground pepper to taste
4 skinless boneless chicken breasts, about 6 ounces each
2 tablespoons olive oil
4 sprigs fresh thyme or 1 teaspoon dried
2 tablespoons finely chopped shallots
2 teaspoons finely chopped garlic
2 teaspoons grated lemon zest
3 tablespoons lemon juice
1/2 cup chicken broth, fresh or canned
2 tablespoons butter

Steps:

  • Season flour with salt and pepper, and dredge the chicken all over. Remove the excess flour.
  • Heat the oil in a heavy skillet large enough to hold the chicken pieces in one layer. Add chicken and cook, uncovered, over medium heat for 5 minutes or until lightly browned.
  • Flip the chicken and cook for 5 minutes more, or until cooked through. Carefully remove the oil from the skillet, leaving the chicken. Discard the oil.
  • Add the thyme, shallots and garlic, and cook for about a minute. Do not burn the garlic. Add the lemon rind, the lemon juice and the broth.
  • Scrape the skillet to dissolve the brown particles that cling to the bottom. Add the butter, and cook for 3 minutes longer. Serve immediately.

CHICKEN BREASTS IN LIGHT LEMON SAUCE

Chicken Breasts in Light Lemon Sauce image

I found a version of this recipe in the paper and tinkered with it to try to lighten it up. This is what I came up with. Some times I saute sliced mushrooms and add them to the sauce. This is good served with rice.

Provided by Sweet PQ

Categories     Chicken Breast

Time 20m

Yield 4-6 serving(s)

Number Of Ingredients 11

6 boneless chicken breasts
1/4 teaspoon salt
1/2 teaspoon pepper (I actually use lemon pepper)
2 tablespoons margarine
2/3 cup chicken broth
2 tablespoons sherry wine (I have used wine in a pinch)
1 tablespoon lemon zest
2 tablespoons fresh lemon juice
1 cup evaporated skim milk
2 teaspoons cornstarch
1/8-1/4 cup parmesan cheese (depends on your preference)

Steps:

  • Season chicken breasts with salt and pepper.
  • Melt margarine in a large skillet, add chicken stock, and bring to a boil.
  • Add the chicken breasts and cook over medium heat, turning once or twice, just until the chicken is no longer pink (this should take 6-10 minutes). Remove the chicken to an ovenproof pan.
  • Add the sherry, lemon juice and lemon peel to the stock in the skillet.
  • Add cornstarch to the evaporated milk, mixing well. Slowly add to the skillet, stirring constantly. Bring to a boil so it thickens.
  • Remove sauce from heat and pour over the chicken.
  • Sprinkle the parmesan cheese over.
  • Place under the broiler until golden brown (should only take a couple of minutes).

Provided by Jess Staldine

Categories     Meat and Poultry Recipes     Chicken     Chicken Breast Recipes

Time 35m

Yield 6

Number Of Ingredients 6

½ cup salted butter
6 skinless, boneless chicken breasts
3 tablespoons lemon juice
2 teaspoons lemon zest
1 cup half-and-half
½ cup grated Parmesan cheese, divided, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Melt butter in a large skillet over medium-high heat. Cook chicken until lightly browned on both sides, 5 to 7 minutes. Place in a baking dish.
  • Stir lemon juice and zest into the leftover butter in the pan, and cook over medium-low heat, stirring, for 3 to 4 minutes. Stir in half-and-half slowly. Stir in 1/4 cup Parmesan cheese until sauce is smooth. Pour sauce over chicken.
  • Bake in the preheated oven until chicken is no longer pink in the center and juices run clear, 20 to 30 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Sprinkle remaining 1/4 cup Parmesan cheese on top.

Tips:

  • To ensure the chicken breasts remain tender and juicy, it's crucial to not overcook them. Cook them until they reach an internal temperature of 165 degrees Fahrenheit (74 degrees Celsius) as measured with a meat thermometer.
  • Use high-quality chicken breasts for the best results. Look for chicken breasts that are plump and have a slight pink color.
  • If you don't have any white wine, you can substitute it with chicken broth or water. However, white wine adds a nice flavor to the sauce, so it's worth using it if you have it on hand.
  • You can use any type of mushrooms you like for this recipe. Some popular choices include white mushrooms, cremini mushrooms, and shiitake mushrooms.
  • If you don't have any heavy cream, you can substitute it with milk or half-and-half. However, heavy cream will give the sauce a richer flavor and texture.
  • To make a gluten-free version of this recipe, use gluten-free flour and tamari instead of soy sauce.

Conclusion:

This Chicken Breasts in Light Lemon Sauce is a delicious and easy-to-make dish that is perfect for any occasion. The chicken breasts are cooked in a flavorful sauce that is made with white wine, lemon juice, and capers. The sauce is then finished with heavy cream, which gives it a rich and creamy texture. Serve this dish with your favorite sides, such as rice, pasta, or vegetables.
