2 cloves garlic, minced
1/4 to 1/2 teaspoon crushed red pepper
1 1/2 pounds boneless, skinless chicken breasts, cut crosswise into 1/2-inch-thick slices
2 tablespoons canola oil
1 1/2 pounds broccoli, stems peeled and sliced 1/4 inch thick, florets separated

2 teaspoons cornstarch, dissolved in 1 tablespoon water
2 tablespoons toasted sesame seeds

Tips:

- Ensure your chicken is cut into 1-inch pieces for even cooking and optimal texture. - Use fresh broccoli florets for the best flavor and texture. If using frozen broccoli, thaw it completely before cooking. - To prevent the broccoli from becoming overcooked and mushy, blanch it in boiling water for 1-2 minutes before stir-frying. - Use a large skillet or wok to ensure all ingredients have enough space to cook evenly without overcrowding. - Heat the oil over high heat to create a nice sear on the chicken and prevent it from sticking to the pan. - Once the chicken is cooked through, remove it from the skillet and set it aside. This will prevent it from overcooking when you add the broccoli and sauce. - Add the broccoli to the skillet and stir-fry until it is tender-crisp. - Return the chicken to the skillet and toss it with the broccoli. - In a measuring cup or small bowl, whisk together the soy sauce, water, brown sugar, rice vinegar, cornstarch, and garlic. - Pour the sauce over the chicken and broccoli and stir-fry until the sauce is thickened and coats the ingredients. - Serve the stir-fry immediately over rice or noodles.
