4 boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
1 medium head broccoli, cut into small florets
2 cups cooked white rice
One 10-ounce can condensed cream of chicken soup
1 cup sour cream
1/2 cup mayonnaise
1 tablespoon lemon juice
10 ounces Cheddar, grated (about 2 1/2 cups)

  • Meanwhile, bring a medium pot of generously salted water to a boil. Add the broccoli florets, and boil until crisp-tender, 2 to 3 minutes.
  • Spread the rice in an even layer in the baking dish. Make a second layer with the broccoli. In a large bowl, mix the chicken soup, the sour cream, mayonnaise, lemon juice, shredded chicken, half the Cheddar and some salt and pepper. Pour the mixture over the broccoli and top with the remaining Cheddar. Bake for 40 minutes; let stand for 5 minutes before serving.

Tips:

  • Use fresh broccoli: Fresh broccoli florets will give your casserole the best flavor and texture. If you only have frozen broccoli, be sure to thaw it completely before using it.
  • Don't overcook the broccoli: Broccoli should be cooked until it is tender-crisp. If you overcook it, it will become mushy and lose its flavor.
  • Use a good quality cheese: The cheese is one of the main ingredients in this casserole, so it's important to use a good quality cheese that melts well. Cheddar cheese is a classic choice, but you can also use other types of cheese, such as mozzarella, Parmesan, or Gruyère.
  • Use a creamy soup: The creamy soup helps to bind the casserole together and gives it a rich flavor. You can use cream of chicken soup, cream of mushroom soup, or cream of celery soup. If you are using a low-sodium soup, you may want to add some salt and pepper to taste.
  • Don't be afraid to experiment: This casserole is a great way to use up leftover chicken and vegetables. You can also add other ingredients, such as diced carrots, celery, or onions. Get creative and make it your own!

Conclusion:

Chicken broccoli casserole is a classic comfort food dish that is perfect for busy weeknights. It is easy to make, and it can be made ahead of time and frozen. This makes it a great option for meal planning. The casserole is also a good source of protein, vegetables, and calcium. So, next time you are looking for a quick and easy meal, give chicken broccoli casserole a try.
