CHICKEN CAESAR PASTA RECIPE - (5/5)

Chicken Caesar Pasta Recipe - (5/5) image

Provided by lisaS

Number Of Ingredients 9

1-1/2 box uncooked dried penne pasta
2 cups chopped cooked chicken
1 bottle creamy Caesar salad dressing (I like wishbone, also if u like it saucy u need more dressing)
3/4 cup reduced sodium chicken broth
1/3 cup chopped green onions
1/4 cup finely chopped red bell pepper
2 bags Mozzarella cheese, shredded (I like a lot of cheese)
1 bag Caesar-seasoned croutons
1/4 cup grated Parmesan cheese

Steps:

  • Heat oven to 350F. Cook pasta according to package directions. Drain. Meanwhile, combine some red pepper, scallions and half a bottle of dressing, chicken broth and some cheese and mix well. Add cooked pasta to the bowl, and mix together. Then add all remaining ingredients except croutons and Parmesan cheese in large bowl. Spoon pasta mixture into ungreased 2-quart casserole or throw away silver pan. Top with croutons and Parmesan cheese. Bake for 20 to 25 minutes or until heated through and croutons are golden brown.

Tips:

  • Use a high-quality Parmesan cheese for the best flavor. Freshly grated Parmesan is ideal.
  • If you don't have anchovies, you can omit them or use a teaspoon of Worcestershire sauce as a substitute.
  • To make the dressing ahead of time, whisk together all of the ingredients except the olive oil. Store the dressing in the refrigerator for up to 3 days. When ready to use, whisk in the olive oil until well combined.
  • If you're short on time, you can use a rotisserie chicken instead of cooking your own.
  • Be sure to season the chicken well with salt and pepper before cooking.
  • Cook the chicken until it is cooked through, but not overcooked. Overcooked chicken will be dry and tough.
  • Add the cooked chicken to the pasta and dressing and toss to coat.
  • Serve the pasta immediately, topped with additional Parmesan cheese, if desired.

Conclusion:

Chicken Caesar pasta is a quick and easy weeknight meal that is sure to please the whole family. It is also a great dish to make ahead of time for a party or potluck. With its creamy, cheesy sauce, tender chicken, and crispy croutons, this pasta dish is a surefire hit. So next time you're looking for a delicious and satisfying meal, give chicken Caesar pasta a try.
