A really great guy I used to work with would make this and bring in to share. We all loved it so much and would beg for more! Sounds strange with the grapes, but it's so good! Allow time for salad to chill.

1 cup finely chopped celery
1 cup seedless grapes, halved
1 cup chopped walnuts (optional) or 1 cup pecans (optional)

1 teaspoon Worcestershire sauce
1/2 cup Miracle Whip

Steps:

8 skinless, boneless chicken breast halves
½ teaspoon garlic powder
salt and pepper to taste
½ teaspoon poultry seasoning
1 cup sour cream
1 (10.75 ounce) can condensed cream of chicken soup
1 (10.75 ounce) can condensed cream of mushroom soup
¾ cup white wine
1 onion, chopped
1 cup fresh sliced mushrooms

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken pieces in a 9x13 inch baking dish. Season chicken with garlic powder, salt, pepper and poultry seasoning.
  • In a large bowl combine the sour cream, cream of chicken soup and cream of mushroom soup. Mix well with a wire whisk. Add the wine and mix together. Pour this cream mixture over the chicken and bake in the preheated oven for 40 minutes.
  • Add the onion and mushrooms and stir into the chicken/sauce mixture. Bake for another 30 minutes. Let cool 10 minutes and serve.

2 boneless skinless chicken breasts, cut into 1 inch cubes
1/3 cup extra virgin olive oil
2 teaspoons garlic, minced
1/2 cup orange juice, freshly squeezed
1 tablespoon lime juice, freshly squeezed
3 tablespoons cilantro, chopped
1 large poblano chile, seeded and cut into 1 inch pieces
1 orange, cut in half
salt and pepper

Steps:

  • Toss all the ingredients together (except the whole orange). Marinate for 30 minute.
  • Alternate the chicken and poblano chile pieces on wooden skewers ( if wooden -- soak in water for 30 minutes) season with salt and freshly ground pepper. Place the skewers on a preheated grill over moderate flame and cook for 3 minutes on each side or until the chicken is cooked.
  • Season once more with salt and pepper and squeeze a fresh orange over the cooked chicken kabobs.

6 large garlic cloves,minced and devided.
2 Tbsp fresh lemon juice.
1/4 tsp fresh lime juice.
1/4 c olive oil, light
2 lb skinless chicken breast,cut into 1-inch strips
3/4 c italian=seasoned dry bread crumbs.
1/2 stick butter.

Steps:

  • 1. Combine 2/3 of the garlic,lime juce,lemon juice,and olive oil in a resealable bag. Add chicken turning to coat.remove air from bag seal and put in the fridge for 6 to 8 hours...turning occasionally...pre-heat grill to med-high heat.On skewers,( If using wooden skewers make shure they have been soked in water for an hour or more).Remove chicken from the bag. Thread on to the skewers. On a small plate pour out the bread crumbs. Roll the chicken skewers in the bread crumbs to coat.
  • 2. Grill skewers for 8 to 12 minutes turning halfway through.(or untill cooked through). While chicken is cooking. In a skillet melt butter add remaning garlic.cook untill just softened.
  • 3. Remove chicken from skewers and drizzle with garlic butter and serve.

4 chicken breasts, skinned and boned
2 or 3 tablespoons of Drambuie
8 tablespoons (4 fluid ounces or 125ml or US half cup) chicken stock
8 fluid ounces (250ml or one US cup) double cream (whipping cream)
3 ounces (125g or ¾ stick) butter
1 ounce (25 g) flaked almonds
4 apples
A little flour, salt and pepper

Steps:

  • Flour and season the chicken breasts and fry in hot butter in both sides. When they are well browned, sprinkle with Drambuie, add the chicken stock, cover and simmer for ten minutes. While the chicken is cooking, peel and core the apples. Cut them into thick slices and cook gently in butter until fairly soft - do not stir to avoid mashing. Remove the chicken to a serving dish, when ready, and keep warm in the oven. Make the sauce by adding more Drambuie, if required, to the stock left in the pan and gently stir in the cream. Heat but do not boil. Add the roasted flaked almonds. Cover the chicken with this sauce and garnish with the sliced apple.

shaved proscutto ham
carbonnara sauce capers and xv olive oil
shredded cheese blend
chicken stuffing
sliced cheese ( munster or your choice maybee american )

Steps:

  • Butterfly and tenderize one 6 ounce bonless chicken breast. After tenderizing marinate in a zip lock bag with a olive oil and caper mix for about two hours in the fridge . ( overnight is fine also ) After marinating gently blot of capers and any extra olive oil with paper towel and open up flat for further prep . Take a teaspoon o carbonnara sauce and put it on the center of the breast and spread around evenly . Add one shaved slice of proscutto ham on top and partially cover with your shredded cheese mix ( cover about 60% with a thin layer )Add one teaspoon of chicken stuffing and gently spread around . Starting on one edge start rolling and tucking like cordon blue leaving the seam on the bottom for baking . Bake in a shallow pan at 350 for approximately 20 min remove from oven add an x of cheese on top and put back in ove for another 3 to 5 minutes untill the cheese browns . Using the broiler for the last minutes usually gives it a nice presentation . Serve with a nice balsamic pan seared asparagus and some dirty rice or a loaded bake potato. Enjoy !!!! Charlie
