CHICKEN CHERRY PASTA SALAD

Categories     Chicken

Number Of Ingredients 12

Ingredients:
1 (16 oz.) box rigatoni pasta
1 lb. cooked chicken, diced
1 package (9 oz.) dried cherries
3/4 cup finely chopped red or yellow onion
3/4 cup finely chopped celery
1 1/2 cup light mayonnaise
1/2 cup light sour cream
4 tbsp stone ground mustard
1/8 cup baker's sugar
salt & pepper, to taste
chopped walnuts (optional)

Steps:

  • Prepare pasta according to package directions. In large bowl, combine pasta, chicken, cherries, onion and celery. In small bowl, combine mayonnaise, sour cream, mustard, sugar, salt, pepper until thoroughly combined. Stir salad dressing into salad ingredients. If dressing is too thick, thin with milk or water.

Tips:

  • Use fresh, ripe cherries for the best flavor. Frozen or canned cherries can also be used, but fresh cherries will yield the best results.
  • If you don't have any fresh herbs on hand, you can use dried herbs instead. Just use about half the amount of dried herbs as you would fresh.
  • Don't overcook the chicken. Overcooked chicken will be dry and tough. Cook the chicken until it is just cooked through, or until it reaches an internal temperature of 165 degrees Fahrenheit.
  • Feel free to add other ingredients to the salad, such as chopped walnuts, crumbled feta cheese, or sliced almonds.
  • Serve the salad immediately, or chill it for later. The salad will keep in the refrigerator for up to 3 days.

Conclusion:

Chicken cherry pasta salad is a delicious and refreshing salad that is perfect for a summer lunch or dinner. It is made with grilled chicken, fresh cherries, pasta, and a light dressing. The salad is easy to make and can be tailored to your own taste. For example, you can add different types of cheese, nuts, or vegetables.
