SLOW COOKER THAI CHICKEN -- WEIGHT WATCHERS RECIPE - (4.2/5)

- In a 4x6 quart slow cooker, whisk together coconut milk, 4 teaspoons curry paste and salt until blended. Add cauliflower, potatoes, pepper and carrots; toss to mix and coat. Rub 2 teaspoons curry paste all over chicken; place chicken on top of vegetable mixture. Cover slow cooker and cook on LOW setting until chicken is cooked through and vegetables are tender, about 5 to 6 hours. Remove chicken to a cutting board and cut into bite-size pieces (or shred using two forks); set aside. Stir peanut butter and remaining 1 teaspoon curry paste into slow cooker until blended. Add chicken back to slow cooker with cilantro and scallions; gently stir to coat. Spoon onto plates or into bowls and serve with lime wedges; sprinkle each serving with 1 teaspoon peanuts. Yields about 1 1/2 cups per serving. Notes: Make sure to cut the cauliflower, carrots and potatoes into similar-size small pieces so they cook through in a similar amount of time. Season to taste with salt and fresh lime juice before serving, if desired. For a spicier kick, serve with sriracha sauce on the side.

Steps:
- Saute onion and garlic in oil until soft.
- Stir in chicken cubes and cook until lightly brown (3 minutes).
- Add curry paste and cook for another 2 minutes.
- Dissolve creamed coconut in boiling water and add to pan.
- Add in potato and puree.
- Cover and simmer for 25 minutes.
- Stir in yogurt and coriander.
- Chop bananas and mix in with lime juice and zest and chill until curry is ready to serve (this is a topping).

Steps:
- Heat oil in a large saucepan or stock pot over medium-high heat; add onion, garlic, green pepper and mushrooms.
- Sauté until vegetables are tender and mushrooms release juice, about 4 minutes.
- Add chicken and sauté until golden brown on all sides, about 5 minutes.
- Add basil, curry powder, salt and black pepper; stir to coat.
- Add tomatoes and bring mixture to a boil. Reduce heat to low, partially cover and simmer 15 minutes.
- Remove from heat and stir in parsley.
- Meanwhile, cook spaghetti according to package directions.
- Transfer spaghetti to four shallow bowls and spoon chicken mixture over top.
- Yields about 1 cup of chicken mixture and 1 cup of spaghetti per serving with a Points value of 8.

Steps:
- Cut chicken into large bite sized pieces.
- Heat oil and cook onion, thyme, curry powder, garlic and ginger until onion is soft.
- Add tomato and coriander; cook stirring for 5 minutes or until tomato soft.
- Add chicken into pan and cook, stirring for 10 minutes or until browned lightly.
- Stir in stock, simmer uncovered for 15 mins or until chicken is cooked through and the sauce has thickened to your taste.
