CURRY CHICKEN BREASTS WITH CHICKPEAS AND SPINACH
This entire dish is built for flavor - and ease. An ideal ingredient for quick weeknight meals, chicken breasts can be pounded thin, so they'll cook quickly and evenly. Here, the cutlets are dusted in flour to create a delicate, golden crust that seals in moisture, and flavored with Madras curry powder, an Indian spice blend featuring coriander, turmeric, chiles, cumin, fennel, garlic and ginger. Toasting it in oil brings out all its warmth and richness. The curried chickpeas make a wonderful side dish on their own, and would pair just as well with another meat or fish.

Tips:
- Use a good quality curry powder for the best flavor. If you can, try to find a curry powder that is made with freshly ground spices.
- Don't be afraid to adjust the amount of chili powder to your taste. If you like it spicy, add more chili powder. If you prefer a milder curry, use less chili powder.
- If you don't have any garam masala on hand, you can make your own by combining equal parts ground cumin, coriander, cardamom, cloves, and black pepper. However, using garam masala is the most traditional way to give chicken curry its distinctive flavor profile.
- If you don't have any coconut milk on hand, you can substitute it with regular milk or yogurt.
- Serve chicken curry with rice, naan, or any other type of flatbread. You can also serve it with a side of raita, a yogurt-based sauce.
Conclusion:
Chicken curry is a delicious and versatile dish that can be made with a variety of ingredients. It is a popular dish in many cultures around the world, and there are many different variations of the recipe. The tips above will help you make a delicious chicken curry that your family and friends will love.
