CANE SAUCE (FOR DIPPIN' CHICKEN)

Cane Sauce (For Dippin' Chicken) image

The sauce from Raisin' Canes restaurant, also similar to a few other chicken finger restaurants (like Guthrie's.) I looked at tons of websites, and combined recipes until it tasted the same to me. This makes enough for 2-3 people to dip chicken, texas toast, and fries in.

Time 45m

Yield 6 serving(s)

Number Of Ingredients 19

2 teaspoons salt
2 teaspoons dry mustard
2 teaspoons ground turmeric
2 teaspoons paprika
2 teaspoons dried ancho chile powder
1 1/2 teaspoons ground cumin
1 1/2 teaspoons garlic powder
1 1/2 teaspoons ground ginger
1 teaspoon ground allspice
3/4 teaspoon onion powder
3/4 teaspoon white pepper
1/2 teaspoon cayenne
1/2 teaspoon black pepper
6 (5 ounce) boneless skinless chicken breast halves
2 tablespoons vegetable oil
2 1/2 cups chopped onions
1/2 cup cane syrup
1/4 cup finely diced fresh jalapeno pepper
2 cups heavy cream

Steps:

  • Combine the seasoning mix ingredients in a small bowl.
  • Sprinkle the chicken evenly with 2 Tablespoons of the seasoning mix. Rub it in well.
  • The turmeric in the seasoning mix turns the chicken a pretty golden color.
  • Heat the oil in a heavy 5-quart pot over high heat just until the oil begins to smoke, about 4 minutes.
  • Brown the chicken in batches, about 3 minutes on each side, then remove from the pot.
  • Add the onions to the pot and cook, stirring and scraping the pot frequently, for 8 minutes.
  • Stir in the syrup, jalapeno peppers, heavy cream, and remaining seasoning mix and scrape the pot bottom thoroughly to loosen all the brown bits.
  • Return the chicken and the accumulated juices to the pot and push it into the sauce.
  • Bring just to a boil, reduce the heat to low, then cover and cook, stirring occasionally, until the chicken is done, about 15 minutes.
  • Serve hot.

Tips:

  • Use fresh, boneless, skinless chicken breasts. This will ensure that your chicken dippers are tender and juicy.
  • Cut the chicken into 1-inch pieces. This will help them cook evenly.
  • Season the chicken with salt, pepper, and garlic powder. This will give them a delicious flavor.
  • Coat the chicken in a mixture of flour, cornstarch, and baking powder. This will help them get crispy.
  • Dip the chicken in beaten eggs. This will help the coating stick to the chicken.
  • Roll the chicken in bread crumbs. This will give them a golden brown color.
  • Fry the chicken in hot oil until golden brown and cooked through. This will take about 5 minutes.
  • Serve the chicken dippers with your favorite dipping sauce. Some popular choices include ranch dressing, honey mustard, and barbecue sauce.

Conclusion:

Chicken dippers are a delicious and easy-to-make appetizer or main course. They are perfect for parties, potlucks, or a quick weeknight meal. With so many different dipping sauces to choose from, there is sure to be a flavor that everyone will enjoy.
