2 tablespoons soy sauce
2 teaspoons ketchup
6 slices unpeeled fresh ginger
1/2 a lemon, juiced (about 2 tablespoons)
1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons fine salt, plus more as needed
1 1/4 to 1 1/2 cups cold seltzer water
1 pound boneless, skinless, chicken breast halves (about 2 large breasts)

1/2 cup olive oil

1 cup all-purpose flour
3 large eggs
3 cups panko (Japanese bread crumbs)

2 whole boneless, skinless chicken breasts (about 1 3/4 pounds), cut into 1/2-inch-wide strips
1/2 cup plain breadcrumbs
1 tablespoon unsalted butter
1/2 teaspoon freshly ground pepper
1 tablespoon cornstarch
1/4 cup honey
Vegetable-oil cooking spray
