Time 40m

Yield 1 serving(s)

Number Of Ingredients 6

1 medium sweet potato, peeled and cut into sticks about 1/4-inch thick
2 teaspoons extra virgin olive oil
1 teaspoon cajun seasoning, to taste
6 ounces boneless skinless chicken breasts, cut into strips
ketchup
creole mustard (optional)

Steps:

  • Preheat your grill to high heat and the oven to 450°F
  • Toss the sweet-potato sticks in 1 tsp of the olive oil and 1/2 tsp of Cajun seasoning.
  • Place them in a single layer on a nonstick baking sheet so they don't touch each other. Bake the fries for 10 minutes, flip them over, and bake for an additional 10 to 15 minutes, or until they're tender and starting to brown. Meanwhile, toss the chicken in the remaining olive oil, then sprinkle with Cajun seasoning. About 5 minutes before the fries are done, grill the chicken for about 2 to 3 minutes per side, or until the strips are no longer pink inside.
  • Serve immediately with ketchup and Creole mustard, if desired.

4 white potatoes
1 tablespoon olive oil
1 teaspoon basil
1/2 teaspoon garlic salt
1/4 teaspoon cayenne pepper
2 eggs
1/4 cup skim milk
1/2 cup flour
1 tablespoon cornstarch
1/2 teaspoon salt
1/2 teaspoon basil
1/4 teaspoon black pepper
1/4 cup olive oil

Steps:

  • Tenderize chicken breast and marinade in oyster sauce overnight. Peel and cut potatoes with a french fry cutter. Toss with olive oil coating evenly. Place single layer on a cookie sheet. Bake in 350 degree oven for 30 minutes, turn all and bake ten minutes more or until golden brown. Meanwhile, Stir together the flour, cornstarch and remaining spices. Cut chicken breasts in 1/2/ inch strips. Soak strips in milk then coast completely with flour mixture. Beat eggs well and coat floured chicken strips in the egg. Fry in olive oil (up to 1/2 cup) on medium high heat for 15 minutes, turning regularly until all sides are golden brown. Drain on paper towel. Serve with ketchup and cold beer. Enjoy!

Tips:

  • Use a combination of breadcrumbs and flour to coat the chicken fingers. This will help them stay crispy on the outside and juicy on the inside.
  • Season the chicken fingers well. Use a variety of spices, such as garlic powder, onion powder, paprika, and salt and pepper to taste.
  • Cook the chicken fingers in hot oil until they are golden brown and crispy. This will help them stay moist and prevent them from becoming dry.
  • Serve the chicken fingers with your favorite dipping sauce. Some popular choices include ranch dressing, honey mustard, and barbecue sauce.
  • For the fries, use a starchy potato like a Russet or Yukon Gold. These potatoes will hold their shape better when fried.
  • Cut the potatoes into even-sized strips. This will help them cook evenly.
  • Soak the potato strips in cold water for at least 30 minutes. This will help remove the starch and make the fries crispier.
  • Fry the potato strips in hot oil until they are golden brown and crispy. Be sure to shake the basket or pan occasionally to prevent the fries from sticking together.
  • Drain the fries on paper towels to remove excess oil.
  • Season the fries with salt and pepper to taste.
