1/4 cup butter
3 tablespoons shallots
2 cloves fresh minced garlic
1/4 cup flour
1/2 cup whipping cream
2 cups chicken broth
2 cups cheddar cheese, grated

3 cups diced cooked chicken
1/2 lb cooked green beans, blanched and well drained
3 large carrots, julienned
4 potatoes, cut in thin slices
1/2-1 cup grated cheddar cheese

Steps:

  • Set oven to 450 degrees.
  • Set oven rack to center position.
  • Butter a baking dish (large enough to hold casserole).
  • For the cheese sauce, melt butter over low heat in a heavy-bottomed saucepan.
  • Gently cook shallots and garlic for a few minutes, or less, be careful not to brown.
  • Gradually whisk in cream, and then the chicken broth, whisk and cook until smooth (about 5 minutes).
  • Blend in grated cheese and green onions, stir until blended.
  • Set sauce aside.
  • In a baking dish, place the diced chicken, and cover with about 1 cup cheese sauce.
  • Top with carrots and green beans.
  • Cover with half of potato slices.
  • Then pour half of the remaining cheese sauce over the carrots and beans.
  • Cover with remainig potato slices, then finish with the remainder of sauce on top of potatoes.
  • Sprinkle top with grated cheddar cheese.
  • Bake in the center of oven for 40-45 mins.

1 chicken, cut into quarters
1 bottle white wine
4 cups chicken stock
2 carrots, chopped
2 celery stalks, chopped
2 onions, chopped
Kosher salt and freshly ground black pepper

1 cup heavy cream
2 bunches asparagus, tips only
4 slices sourdough bread
4 tablespoons unsalted butter
Chopped fresh chives, for garnish
Crispy Potatoes au Gratin, for serving, recipe follows
2 tablespoons unsalted butter, softened, for greasing
2 small russet potatoes, peeled
Kosher salt and freshly ground black pepper
Kosher salt and freshly ground black pepper
16 tablespoons grated gruyere cheese
1/2 cup heavy cream
4 teaspoons unsalted butter, cold, cut into small cubes

Steps:

  • Put the chicken into a large pot. Pour over the wine and chicken stock. Add water if necessary so the chicken is covered. Add the carrots, celery and onions and season with salt and pepper. Put over medium-high heat and bring it to a boil. Turn off the heat and cover the pan. Let is sit for 30 minutes so the chicken finishes cooking. Remove the chicken from the pot and keep warm, reserving the poaching liquid.
  • Strain 2 cups of the poaching liquid into a medium pot over high heat. Bring to a boil and reduce the liquid by half. Whisk in the cream and reduce by half again. Cover and keep warm.
  • Strain 1 cup of the poaching liquid into another medium pot over high heat. Bring to a boil. Reduce the heat to a simmer and add the asparagus tips. Cook until they are just tender and bright green, about 1 minute. Drain and keep warm.
  • When ready to serve, toast the bread and spread it with 2 of the tablespoons butter. Whisk the remaining 2 tablespoons butter into the cream sauce. Place the toast onto a plate, top with a chicken quarter and ladle some cream sauce over it. Garnish with chives. Serve with asparagus tips and Crispy Potatoes au Gratin.
  • Preheat the oven to 350 degrees F. Grease 4 shallow ovenproof ramekins with the softened butter.
  • Slice the potatoes as thinly as possible. Fan a layer of potatoes into the ramekins. Season with salt and pepper and sprinkle over 2 tablespoons cheese. Add another layer of potato and season with salt and pepper and sprinkle over 2 more tablespoons cheese. Put the ramekins onto a baking sheet and pour the cream over the potatoes in each dish. Dot with the cold butter. Bake until brown and crispy, 20 to 25 minutes.

1 (485 g) can creamy chicken and corn soup
1/2 cup sour cream

1 teaspoons kosher salt
1 teaspoon freshly ground black pepper
6 strips bacon, chopped
1 cup chopped Spanish onion, about 1 large onion
2 cups chopped red cabbage, about 1/2 head
1 tablespoon sugar
2 teaspoons kosher salt
1 teaspoon freshly cracked black pepper
1/2 cup red wine
1/4 cup balsamic vinegar
2 tablespoons olive oil
2 teaspoons Chinese five-spice powder
1 teaspoon garlic powder

Steps:

  • Gratin:
  • Preheat the oven to 400 degrees F.
  • Toss the first 6 ingredients together in a bowl, making sure the potato slices are evenly covered with the mixture. Spray 2 ramekins with cooking spray and gently press a handful of the potatoes into each one. Arrange the ramekins on a sheet pan and fill each cup 3/4 of the way with the cream mixture and cover the top with foil. Slide the pan into the oven and cook until the potatoes are cooked through, about 30 to 45 minutes.* Remove the foil, add 2 tablespoons of the remaining cheese to each ramekin and cook until cheese is bubbling, about 4 to 8 minutes. Remove the gratins from oven and set aside.
  • Cabbage: In a medium skillet, over medium heat, add the bacon and cook until crispy, about 5 to 8 minutes. Remove the bacon to a plate, leaving 3 to 4 tablespoons of the fat in the skillet. Add the onions and saute for 5 to 7 minutes over medium-high heat. Stir in the cabbage, sugar, salt and black pepper and continue cooking for an additional 6 to 8 minutes. Add the red wine, toss the ingredients and cook covered with a lid until the liquid has almost completely evaporated, about 8 to 12 minutes. Stir in the balsamic vinegar and cook until it has almost evaporated as well, about 1 to 3 minutes. Turn off the heat and add the reserved bacon.
  • Chicken: Combine the first 5 ingredients in a medium bowl. Add the chicken breasts, toss to coat with the marinade and allow them to sit for 10 to15 minutes. In a saute pan over medium heat, add the chicken breasts and cook for 4 to 5 minutes on the show side and 6 minutes the other side, or until cooked through. Remove the chicken to a cutting board and top each breast with 1 tablespoon of butter. Cover with foil, allow them to rest for 5 minutes, then slice lengthwise.
  • To serve: Put a portion of the cabbage in the center of each dish. Arrange the chicken, on top of the cabbage. Run a knife along the inside of each ramekin, to loosen, and invert them onto the plates before serving.

2 lb red potatoes, peeled, thinly sliced (6 cups)
1 jar (16 oz) Alfredo pasta sauce
1/2 cup milk
2 cups shredded Swiss or Gruyère cheese (8 oz)
3/4 cup freshly grated Parmesan cheese (3 oz)

Steps:

  • Brush 13x9-inch (3-quart) glass baking dish with 1 teaspoon of the softened butter; sprinkle garlic in bottom of dish. Set aside. Cut off stalks from fennel bulbs to within 1 inch of bulb; reserve 1/4 cup of the feathery leaves and discard stalks. Cut off and discard bottom of bulbs. Cut bulb lengthwise into quarters; remove core. Cut each quarter crosswise into about 1/4-inch-thick slices to make about 4 cups.

2 fresh thyme sprigs

1/4 teaspoon whole black peppercorns
For cheese sauce and casserole
1 stick (1/2 cup) unsalted butter plus additional for greasing gratin dishes
1 garlic clove, minced
1/2 cup all-purpose flour
3 cups whole milk
1 cup crème fraîche (8 oz)
1 teaspoon salt
1/2 teaspoon black pepper
1/4 teaspoon cayenne
1 lb Gruyère, coarsely grated (6 cups)
1 oz Parmigiano-Reggiano, finely grated with a rasp (1 1/4 cups)
1 lb penne rigate or other short tubular pasta
6 cups fine fresh bread crumbs (from 14 slices firm white sandwich bread)

2 (2 1/2- to 3-qt) shallow gratin dishes (13 by 9 inches)

Steps:

  • Poach chicken and make stock:
  • Cut backbones, wing tips, and second joints of wings from chickens, then cut each chicken into quarters. Put backbones, wing tips, second joints, and giblets (except livers) in a 6- to 8-quart pot with water, celery, carrot, onion, garlic, thyme, salt, and peppercorns and bring to a boil. Add chicken quarters and return liquid to a boil, skimming off any foam, then reduce heat and simmer, uncovered, 10 minutes. Remove from heat and let stand, covered, 40 minutes.
  • Transfer chicken quarters with tongs to a shallow baking pan. When chicken is cool enough to handle, remove meat from skin and bones, transferring meat to a cutting board and returning skin and bones to pot. Cut chicken into 1-inch pieces and reserve in a large bowl. Boil stock 40 minutes, then pour through a fine-mesh sieve into a large bowl, discarding solids. Let stand 5 minutes, then skim off fat and set aside 4 cups stock for making sauce. (Reserve remaining stock for another use.)
  • Make sauce, cook pasta, and assemble casserole:
  • Put oven rack in middle position and preheat oven to 425°F. Butter gratin dishes.
  • Heat butter (1 stick) in a 4-quart heavy pot over moderate heat until foam subsides, then add garlic and cook, whisking, 1 minute. Add flour and cook, whisking, 1 minute. Add milk and reserved stock (4 cups) in a slow stream, whisking, then bring to a boil, whisking. Reduce heat and simmer, whisking occasionally, until sauce is slightly thickened, about 10 minutes. Remove from heat and stir in crème fraîche, salt, pepper, cayenne, 2 cups Gruyère, and 1/2 cup Parmigiano-Reggiano.
  • While sauce simmers, cook pasta in a 6- to 8-quart pot of boiling salted water , uncovered, until not quite al dente, 8 to 10 minutes (pasta should still be firm), then drain in a colander. Return pasta to pot, then add chicken and sauce, tossing to coat. Divide pasta mixture between gratin dishes.
  • Toss bread crumbs with remaining 4 cups Gruyère and 3/4 cup Parmigiano-Reggiano, then sprinkle evenly over pasta mixture. Bake gratins until crumbs are golden brown and sauce is bubbling, 20 to 30 minutes. Let stand 10 minutes before serving.

4 cups tortiglioni (or any other short pasta)
2 cups broccoli florets
2 tablespoons all-purpose flour
1/2 lb canadian havarti cheese, shredded
3/4 cup breadcrumbs

Steps:

  • Melt half the butter in a large casserole over medium heat, add chicken and brown on both sides.
  • Pour in wine and chicken broth, add tarragon, cloves, onion, garlic, salt and pepper.
  • Bring to a boil over high heat.
  • Cover and let simmer over low heat for about 20 to 25 minutes, until chicken is tender.
  • Cook the tortiglioni according to instructions on package, adding broccoli florets to the cooking water together with pasta.
  • Drain and set aside.
  • Remove the chicken from the casserole and cut into dices.
  • Keep warm.
  • Mix together the second half of butter and the flour.
  • Stir in mixture to remaining juices in casserole.
  • Bring to a boil over medium heat, stirring constantly.
  • Remove from heat, gently stir in tortiglioni, broccoli and chicken dices.
  • Pour in ovenproof dish, top with shredded Canadian Havarti cheese and breadcrumbs.
  • Cook in the oven at 350 ºF (180 ºC) for 8 to 10 minutes, until golden brown.
  • Serve hot.

  • 1. In a medium non-stick saucepan, sauté the chicken until cooked through.
  • 2. Add 2 cans of condensed mushroom soup and the frozen green peas until the soup is heated through.
  • 3. In a 2-½ quart casserole, combine the shredded hash browns and soup mixture from #2.

CHICKEN & POTATOES AU GRATIN
4 to 5 strips of crispy bacon
4 to 6 boneless boneless skinless chicken breasts
1 stick (cube) of margarine to brown the chicken in
1 cup of flour (for dredging the flour in)
5 About 5 - med to lg. potatoes
enough to fill a 9×13 glass baking dih
1 pint whipping cream- 2 cups
Salt and Pepper
2 tsp. Parsley flakes
2 cups grated cheddar cheese

Steps:

  • Directions: Place bacon slices on a foil lined baking sheet. Preheat the oven to 400 degrees and place bacon in the oven for 15 to 20 minutes, or until bacon is crisp & brown. Remove bacon to a paper towel lined plate and pat away any remaining grease. Set bacon aside for later. While the baking is cooking, brown the chicken breasts. In a large skillet or electric fry pan, melt 1 stick of margarine. (I use margarine, because butter burns too quickly) Place 1 cup of flour into a baggie and season it with salt & pepper. About 1/2 tsp of each will do. Shake each piece of chicken in the seasoned flour until it's well coated. Place chicken pieces in skillet and brown until golden on each side. Place browned chicken in a 9×13 " glass baking pan. Cut your potatoes into thin french fry strips, and lay the fries around the chicken (Arctic circle type of thin!) Pour all of the cream over the top of the fries and the chicken. Salt and pepper a bit more. Crumble bacon over the top. Sprinkle at least 2 cups grated Cheddar Cheese over the top. Sprinkle Parsley flakes on top of the cheese. Spray the underside of the foil with pam or pan release, and cover the chicken and potatoes. Poke a fork through the top of the foil, 2 or 3 times to allow a little steam to escape. This way, your cream doesn't boil over into your oven! Cook at 400 degrees for about 1 hour, or until potatoes are tender. Place your oven rack in the middle of the oven to begin with. For crispy potatoes: During the last 15 or 20 minutes of baking lower your rack one more step. This makes the bottom of your potatoes, brown and crispy. EAT! Serve with a nice green salad and warm rolls.

3 cups diced cooked chicken
8 firm, perfect, unblemished endives, about one and one-half pounds
2 1/2 cups fresh or canned chicken broth
Juice of one-half lemon
Salt to taste if desired
Freshly ground pepper to taste
3 tablespoons butter
1/4 cup flour
1 cup heavy cream
1 egg yolk
2 tablespoons freshly grated Parmesan cheese
1 tablespoon fine fresh bread crumbs

Steps:

  • Preheat oven to 375 degrees.
  • Prepare the chicken and set aside.
  • Trim off the darkened ends of the endives. Split the endives in half lengthwise and cut the pieces into one-inch lengths crosswise. There should be about eight cups.
  • Put the pieces in a casserole and add one-half cup of the chicken broth, the lemon juice, salt and pepper. Cover, bring to a boil and cook about 15 minutes. The liquid should have evaporated. If there is liquid, uncover and cook until liquid evaporates.
  • Meanwhile, melt the butter in a saucepan and add the flour, stirring with a wire whisk. When blended, add the remaining two cups of chicken broth, stirring rapidly with the whisk. Continue cooking, stirring often with the whisk, about 10 minutes. Add the cream, salt and pepper, and continue cooking about five minutes, stirring often.
  • Add the chicken to the endives and two cups of the sauce. Stir to blend.
  • To the remaining sauce add the egg yolk and blend.
  • Spoon the creamed chicken mixture into a baking dish (an oval dish measuring 14 by 8 1/2 by 2 inches is ideal). Spoon the remaining sauce over all, and sprinkle with the cheese and bread crumbs. Bake in the oven 30 minutes or until piping hot and golden brown on top.

1 pkg chicken breasts (or whole chicken)
1 box uncle bens* broccoli rice augratin (cooked) or rice a roni* broccoli au gratin (cooked)
1 can(s) cream of mushroom soup
1/2 c sour cream
1 small onion-chopped
1 clove garlic-chopped
1 sleeve ritz* crackers
1/2 stick butter-melted
***PREHEAT OVEN TO 350 DEGREES***

Steps:

  • 1. Boil the chicken. When done, reserve some chicken stock. Chop the chicken into bite size pieces. While chicken is boiling, cook the rice according to package directions.
  • 2. Mix rice, chicken, soup, sour cream, onion and garlic together in a medium mixing bowl. If too thick, can add a little of the reserved chicken stock. (I usually add some stock about 1/4 cup) Place in a greased 8x8 casserole dish.
  • 3. Crush the crackers and pour the melted butter on top. Sprinkle the crackers over the casserole.
  • 4. Place in oven, and bake at 350* for 30 minutes. Turn oven up to 400* and cook for 5 minutes or until the crackers are golden brown.

-300ml/1/2 pint double cream
-1 large broccoli, divided into florets
-15 gr of butter
-50gr strng cheese, grated
-110gr breadcrumbs

Steps:

  • Place the chicken in a large saucepan with the onion, carrots, celery, parsley,bay leaf, peppercorns, and enough water to cover. bring slowly to the boil, then reduce the heat and simmer until the chicken is cooked. Remove the chicken from the pan and leave to cool.Strip the meat off the bones, dice and set aside.Strain the cooking liquid into a saucepan and boil until reduced 600ml. Add the cream, return to the boil till become thick sauce. Blanch the broccoli in boiling salted water until just tender, then drain and refresh under cold water, stir the diced chicken and broccoli in to the sauce and season to taste with salt and pepper. Pour this mixture into an ovenproof dish. Melt the butter and mix with the cheese and breadcrumbs. Spread over the chicken mixture and bake in an oven preheated to 180C/ 350F gas mark 4 for 20 minutes or until brown and bubbling
