HONEY & ROSEMARY FRIED CHICKEN

Honey & Rosemary Fried Chicken image

I loved the light, crispy batter and the combination of flavors--there is something very appealing about the combination of garlic and honey! There wasn't enough flour or buttermilk to coat 3-4 pounds of chicken. From article about fried chicken in Taste of the South magazine--featured restaurant, Julep, Jackson, Mississippi (http://juleprestaurant.com/menu_latenite.htm)

Categories     Chicken

Time 44m

Yield 6-8 serving(s)

Number Of Ingredients 10

1 (3 -4 lb) chicken, cut into 8 to 10 pieces or 3 lbs chicken pieces
1 -1 1/2 cup all-purpose flour
1 tablespoon garlic powder
1 tablespoon salt (or less!)
1 tablespoon white pepper
1 cup buttermilk
peanut oil (for frying)
3/4 cup honey
1 tablespoon butter
1 sprig rosemary, chopped

Steps:

  • Wash chicken and pat dry.
  • Mix flour with garlic powder, salt, and pepper.
  • Dip chicken in seasoned flour, then buttermilk, then seasoned flour again. Set aside.
  • In a large skillet, heat oil to 325°F over medium-high heat. Add chicken, skin-side down, beginning with the dark meat. Keeping oil at 325°F, cook each side for 5 to 6 minutes covered and then 5 to 6 minutes uncovered, for a total cooking time of 20 to 24 minutes. Drain chicken on a wire rack.
  • To serve, drizzle Honey Rosemary Glaze over chicken, if desired.
  • For Honey Rosemary Glaze: In a small saucepan, combine honey, butter, and rosemary. Cook over low heat on stovetop until butter has melted. Stir to combine.
  • Chef's note: Use more flour to offset salt. Also, be sure you only "warm" honey--don't let it get hot enough to boil! I used chicken tenders (see photo).

ROASTED ORANGE ROSEMARY HONEY GLAZED CHICKEN

Roasted Orange Rosemary Honey Glazed Chicken image

This is always a hit when I make it for dinner parties and Boxing Day dinner because the chicken is always fall-off-the-bone juicy and people love the glaze. People always go for seconds! You may quarter 2 chickens instead if you aren't able to get just legs from your butcher, but I find the legs are juicier and save money. Serve this dish with fragrant rice and dilled carrots or roasted asparagus.

CHILE-ROASTED CHICKEN WITH HONEY, LEMON AND FETA

Chile-Roasted Chicken With Honey, Lemon and Feta image

A little sweet, a little spicy and very citrusy, this easy chicken recipe hits all the right notes, making it the kind of weeknight dinner you'll put on repeat. The feta adds a creamy, salty bite that's softened by the lemon and honey, while rosemary and red-pepper flakes round out the flavors. Serve this with a loaf of crusty bread or flatbread for scooping up all the tangy pan juices. You won't want to leave a drop behind.

Categories     dinner, poultry, main course

Time 50m

Yield 4 servings

Number Of Ingredients 10

3 pounds bone-in, skin-on chicken thighs and drumsticks (to substitute breasts, see Tip)
Salt and black pepper
2 large garlic cloves, finely grated or crushed to a paste
1 tablespoon honey
1 tablespoon extra-virgin olive oil, plus more for drizzling
1/4 teaspoon red-pepper flakes, plus more for serving
2 fresh rosemary sprigs
1 lemon, preferably a Meyer lemon, thinly sliced and seeded
2 ounces feta, crumbled into large pieces (a heaping 1/2 cup)
Chopped mint, dill or parsley, for serving

Steps:

  • Season chicken all over with salt and pepper. In a large bowl, mix together garlic, honey, olive oil and 1/4 teaspoon red-pepper flakes. Add chicken and toss well with your hands, spreading the garlic paste all over the chicken pieces. (Don't worry if the honey is a little clumpy.) Add rosemary sprigs and lemon slices and toss to combine. Let marinate at room temperature for 30 minutes, or up to 8 hours in the refrigerator.
  • Heat oven to 425 degrees. Line a sheet pan with a silicone liner or parchment paper.
  • Spread chicken and lemons across a single layer in the lined pan, tucking in the rosemary sprigs. Drizzle oil generously over everything. Roast for 20 minutes.
  • Using tongs, turn over the chicken pieces, and give the lemons a stir. Sprinkle feta on top. Continue to bake for 20 to 25 minutes longer, until the chicken is deeply bronzed and cooked through, and an instant-read thermometer inserted into the thickest part of the thigh or drumstick registers 165 degrees. Serve garnished with chopped herbs and more red-pepper flakes, if you like.

Tips:

  • Choose the right chicken legs: Look for plump, meaty legs with smooth, unblemished skin. Avoid legs that are bruised or have any signs of spoilage.
  • Pat the chicken legs dry before cooking: This will help the skin crisp up and prevent the chicken from steaming.
  • Season the chicken legs generously: Use a combination of salt, pepper, and your favorite herbs and spices. You can also add a little bit of citrus zest or garlic powder for extra flavor.
  • Roast the chicken legs at a high temperature: This will help to create a crispy skin and juicy meat.
  • Baste the chicken legs with the honey-rosemary mixture: This will help to keep the chicken moist and flavorful.
  • Let the chicken legs rest before serving: This will allow the juices to redistribute and make the meat more tender.

Conclusion:

Chicken legs with honey and rosemary is a delicious and easy-to-make dish that is perfect for any occasion. The combination of sweet, savory, and herbal flavors is sure to please everyone at the table. So next time you're looking for a tasty and satisfying meal, give this recipe a try.
