1 ripe Mango
200 grams Long grain rice
0.5 l Chicken broth
2 garlic cloves
1 onion
1 double Chicken breast
2 Tbsps vegetable oil
1 red Pepperoncini
6 Tbsps olive oil
4 Tbsps Vinegar
lemons (juiced)
salt
peppers
1 bunch Peppermint

Steps:

  • Peel the mango, cut out the pulp from the pit and chop the pulp into small pieces. Rinse the rice and cook in boiling chicken broth in a pot until al dente. Drain the rice and set aside. Peel the garlic and onion, and chop. Rinse the chicken breasts, pat dry, cut into bite-sized pieces, and season with salt and pepper. Heat vegetable oil in a pan and fry the chicken breast pieces in it with the garlic until golden brown. Remove from heat and let cool.
  • Slit the pepperoncini lengthwise, remove seeds and cut into thin strips. Mix the cooked chicken breast pieces with cooked rice, chopped mango, pepperoncini strips, olive oil, vinegar and lemon juice, and season with salt and pepper. Chill the salad for 1 hour in the refrigerator. Before serving, garnish the sald with peppermint.

1 lb. boneless
c. plus 1 tablespoon cooking oil
1 1/4 tsp. salt
3/4 tsp. fresh-ground black pepper
3/4 c. Chopped red onion
1 mango
1 avocado
3 1/2 tbsp. lime juice (from about 2 limes)
3/4 c. Chopped cilantro

Steps:

  • In a large pot of boiling, salted water, cook the rice until just done, 10 to 15 minutes. Drain. Rinse with cold water. Drain thoroughly.
  • Coat the chicken with the 1 tablespoon oil. Season with 1/4 teaspoon each of the salt and pepper. Heat a grill pan over moderate heat. Cook the breasts until just done, 4 to 5 minutes per side. I tend to like more fruit and cilantro with less rice.

1 1/2 cups uncooked rice, preferably short grain
1 1/3 lbs boneless skinless chicken breasts
2 tablespoons oil
1 1/4 teaspoons salt
3/4 teaspoon fresh ground pepper
3/4 cup chopped red onion
1 mango, peeled and cut into 1/2 inch dice
1 avocado, peeled and cut into 1/2 inch dice
3 1/2 tablespoons lime juice (about 2 limes)
3/4 cup chopped cilantro

  • Cook rice until done, and rinse with cold water.
  • Coat chicken with 1 tbs. of the oil and season with 1/4 teaspoons of the S/P.

1 1/2 lbs chicken breasts (4)
1 (8 ounce) can crushed pineapple, undrained
1/3 cup mango chutney
1 teaspoon coarse grain mustard
3 cups cooked brown rice, chilled for at least 30 minutes
1 (15 ounce) can mandarin orange segments, drained & liquid reserved
1 1/2 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon rice vinegar
1/4 teaspoon ground ginger
1 teaspoon sriracha sauce (optional)
3 green onions, thinly sliced
2 celery ribs, sliced
1 (8 ounce) can water chestnuts, drained & diced
salt & pepper, to taste

Steps:

  • Preheat oven to to 350°F.
  • Sprinkle salt and pepper on both sides of chicken and place in a sprayed 8 x 8-inch baking dish.

  • Cook the rice according to packet intructions.
  • Make the mango sauce. In a blender, puree two thirds of the mango. Combine the remaining mango cubes, water and sugar in a pan. Place over medium heat and stir with a wooden spoon until the sugar dissolves. Add the mango puree and cook, stirring until the mixture is hot. You could even add some chopped red chilli here. Season with salt, pepper and a squeeze of lemon juice. Take of the heat, and stir in the yoghurt.
  • In a large bowl, mix together the chicken, mango, cooked and drained rice, tomato, and spring onions. Finish with a sprinkling of the corriander. Serve warm.
  • If your short on time, substitute the mango sauce for 2-3 tbsp of mango chuntney, warmed lightly in a pan and then stir in the yoghurt.
