CHICKEN WITH CIDER & BACON SAUCE image

Number Of Ingredients 7

4 chicken breasts
1/4 t. salt
1/4 t. pepper
4 bacon slices
1/4 C. minced onion
3/4 C. apple cider
1/2 C. chicken stock

Steps:

  • Pound chicken to 1/2" thickness. Season w/salt & pepper. Cook bacon over med heat until crisp, remove bacon from pan. Dice bacon. Add chicken, cook until done, remove and keep warm. Add onion to pan, cook 2 mins, stirring constantly. Add cider & stock, bring to a boil, scraping pan to loosen bits. Cook until reduced to 1/2 C. about 5 mins. Stir in the cooked bacon, serve sauce over chicken.
