4 skinless, boneless chicken breasts
cooking spray
1 clove garlic, minced
1 pinch salt
1 pinch ground black pepper
1 pinch ground cumin
1 cup salsa
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Heat a greased skillet to medium. Rub chicken pieces with garlic, salt, pepper and cumin to taste; place in hot skillet. Cook until brown on both sides and no longer pink, 10 to 15 minutes.

2 tablespoons plain yogurt
1/3 cup salsa
2 teaspoons lime juice
2 tablespoons lemon juice
1 teaspoon salt
2 tablespoons Dijon mustard
2 chicken breast halves, boneless,skinless

Steps:

  • Stir together salsa, juices, yogurt, salt, and mustard.
  • Pour over chicken; cover and refrigerate for 30 to 45 minutes.
  • Remove chicken and reserve marinade.
  • Broil in pan 5 to 6 inches from heat for 10 minutes.
  • Turn chicken over and and brush with reserved marinade mixture.
  • Broil for 15 minutes more.

2 pounds bone-in chicken parts
1 teaspoon salt
1 teaspoon paprika
2 tablespoons butter
2 cups long-grain white rice
1 teaspoon saffron
1 (32 fluid ounce) container chicken stock
1 red bell pepper, chopped
1 cup green peas

Steps:

  • Heat vegetable oil in a large saucepan over medium heat. Season chicken pieces with salt and paprika; fry chicken in the hot oil until browned, about 5 minutes per side. Transfer chicken to a plate. Drain excess grease from skillet.
  • Melt butter in the same skillet over medium heat; stir rice and saffron into hot butter and cook until rice is yellow and slightly fragrant, about 3 minutes. Stir stock into rice and cook until rice is slightly softened, about 10 minutes. Return chicken parts to skillet, stir in red bell pepper, and cover. Simmer about 10 minutes. 1 (15 1/2 ounce) can black beans, rinsed and drained
1 (8 ounce) package mexican-style shredded cheese, 2 cups
1 (4 1/2 ounce) can chopped green chilies
2 teaspoons ground cumin
1 (14 ounce) package spinach burrito-size flour tortillas
2 (10 ounce) cans milk green enchilada sauce
sour cream, cilantro and pimentos, for garnish

Steps:

  • Preheat oven to 375 degrees. Coat 13x9-inch baking dish with cooking spray. Combine chicken with beans, 1 cup cheese, scallions, chiles with liquid and cumin.

2 tomatoes (chopped)
1 -2 jalapeno (seeded & chopped)

4 large boneless skinless chicken breast halves
1 can (4 ounces) chopped green chilies, drained
2 ounces Monterey Jack cheese, cut into 4 strips
1/4 cup fine dry bread crumbs
2 tablespoons grated parmesan cheese
3-1/2 teaspoons chili powder
1/4 teaspoon salt
1/8 teaspoon ground cumin
4 tablespoons butter, melted
2 teaspoons cornstarch
1/2 teaspoon chicken bouillon granules
1/2 cup cold water
1 cup picante sauce

Steps:

  • Flatten chicken to 1/4-in. thickness. Place about 2 tablespoons chilies and one strip of Monterey Jack cheese on long end of each chicken breast. Fold in sides and ends; secure with a toothpick., In a shallow bowl, combine the crumbs, Parmesan cheese, chili powder, salt and cumin. Dip chicken in 3 tablespoons butter, then roll in crumb mixture. Place chicken rolls seam side down in an ungreased 11x7-in. baking dish. Drizzle with remaining butter. Cover and refrigerate at least 4 hours. 1/4 teaspoon garlic salt
2 tablespoons butter or 2 tablespoons margarine
1/2 cup green bell pepper, chopped
1/2 cup green onion, sliced
1 cup picante sauce
4 ounces cheese spread, diced
2 -3 cups rice, cooked (hot)
1/4 cup fresh cilantro, chopped

Steps:

  • Sprinkle chicken with garlic salt.
