Steps:
- On sheet of wax paper or a paper plate combine flour, Parmesan cheese, and 1/4 tsp each salt and pepper.
- Dredge chicken in flour mixture, coating both sides and reserving any remaining flour mixture.
- In 10-inch skillet heat 1 1/2 tsps oil over medium-high heat; add onions and garlic and saute until onions are softened.
- Add mushrooms, basil and remaining 1/4 tsp salt and saute until mushrooms are tender, about 5 minutes.
- Transfer mixture to plate and set aside.
- In same skillet heat remaining 1 1/2 tsp oil; add chicken and cook, turning once, until lightly browned 1 to 2 minutes on each side.
- Stir in any reserved flour mixture; gradually add wine and water and, continuing to stir, bring mixture to a boil.
- Return mushroom mixture to pan and cook until heated through.
Tips:
- Use low-sodium chicken broth: This will help keep the dish from becoming too salty.
- Choose a flavorful mushroom variety: Cremini or shiitake mushrooms are good options, as they have a more intense flavor than white button mushrooms.
- Don't overcrowd the pan: If you add too many mushrooms to the pan at once, they will steam instead of sautéing.
- Cook the chicken and mushrooms in batches if necessary: If your pan is not large enough to accommodate all of the chicken and mushrooms at once, cook them in batches.
- Season the chicken and mushrooms generously: Salt, pepper, and garlic powder are all good choices.
- Add a splash of white wine or lemon juice: This will help brighten the flavors of the dish.
- Serve immediately: Chicken and mushrooms are best served hot, so don't let them sit around for too long before serving.
Conclusion:
This Weight Watchers Chicken and Mushrooms recipe is a delicious and healthy meal that is perfect for a weeknight dinner. It is low in calories and fat, and it is packed with protein and vegetables. The chicken and mushrooms are cooked in a flavorful sauce that is made with low-sodium chicken broth, white wine, lemon juice, and herbs. This dish is sure to please everyone at the table.
