Time 40m

Yield 4

Number Of Ingredients 5

1 3/4 cups cubed (3/4 inch) cooked ham (3/4 lb)
3 medium baking potatoes, peeled, cut in half lengthwise, then cut into 1/8-inch wedges (about 3 cups)
1 1/3 cups Alfredo pasta sauce (from 16-oz jar)
1 cup shredded Swiss cheese (4 oz)
2 tablespoons chopped fresh chives, if desired

Steps:

  • Heat gas or charcoal grill. Cut 20x18-inch sheet of heavy-duty foil; spray with cooking spray. Place ham on center of sheet. Top with potatoes, pasta sauce and cheese.
  • Bring up 2 sides of foil over ham mixture so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.
  • Place packet on grill over low heat. Cover grill; cook 20 to 25 minutes, rotating packet 1/2 turn after 10 minutes, until potatoes are tender.
  • To serve, cut large X across top of packet; carefully fold back foil to allow steam to escape. Sprinkle with chives.

This is a great way to use up leftover mashed potatoes. I just added some ham and cheese and baked it in the foil packs.

This recipe was a little too rich for my taste. I think I'll try using less cheese next time.

I'm not sure what went wrong, but my potatoes were mushy. I think I might have cooked them for too long.

This recipe was a bit too salty for my taste. I think I'll use low-sodium ham next time.

Overall, this was a good recipe. The ham and potatoes were cooked perfectly, but the sauce was a little bland. I added some garlic and herbs to taste.

The potatoes were a little dry for my taste, but the ham was delicious. I think I'll try adding some more butter or olive oil to the potatoes next time.
