One 2- to 3-pound chicken fryer, cut up
2 carrots, diced
2 celery stalks, diced
1/2 medium onion, diced
1 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon ground thyme
1/4 teaspoon turmeric
16 ounces frozen home-style egg noodles (such as Reames)
3 tablespoons all-purpose flour
Splash of half-and-half, optional
2 teaspoons finely minced fresh parsley

Steps:

  • Start by putting the chicken in a pot and covering it with water. Bring the water to a boil, and then reduce the heat to low. Simmer for 45 minutes. Remove the chicken from the pot. Set the chicken aside to cool briefly.
  • Shred the chicken with 2 forks, reserving the bones. Return the bones to the pot and boil for 20 minutes. Remove the bones from the pot and discard.
  • Add the shredded chicken, carrots, celery and onions to the pot. Then add the salt, pepper, thyme and turmeric. Bring the mixture to a gentle boil, and then reduce the heat and simmer for 10 minutes. Stir in the noodles; no need to thaw them first!
  • Finally, mix the flour with 1/2 cup water until smooth. Stir the flour mixture, the splash of half and half (if you're into that kind of thing) and the minced parsley into the pot. 1 (2 to 3 pound) whole chicken, cut into pieces
4 stalks celery, diced
celery tops
1 carrot, shredded
1 onion, halved - unpeeled
ground black pepper to taste
3 (32 fluid ounce) containers chicken broth
2 eggs, beaten
1 cup warm water
2 tablespoons vegetable oil
1 teaspoon salt
3 cups all-purpose flour

Steps:

  • In a large pot over medium heat, combine chicken, celery and their tops, carrot, onion and its peel, and pepper. Pour broth over and bring to a boil. Cover, reduce heat and simmer until chicken is tender and falls from the bone, about 45 minutes.
  • While chicken is cooking, make noodles. In a large bowl, combine eggs, water, oil, salt and enough of the flour to make a stiff dough.
  • Strain chicken stock, reserving meat, celery and carrots. Pull meat from bones and return strained stock and meat, celery and carrots to pot. Bring to a boil. Make noodles by cutting dough from a broth-dipped spoon or using scissors or your fingers to make small, chickpea sized, noodles and dropping them in the boiling water. 4 slices OSCAR MAYER Bacon, cut into 1-inch pieces
4 small boneless skinless chicken breasts (1 lb.)
2 cups sliced fresh mushrooms
1 small onion, chopped
2 Tbsp. flour
1 can (14-1/2 oz.) fat-free reduced-sodium chicken broth
1/4 cup water
2 cups egg noodles, uncooked
1/2 cup (1/2 of 8-oz. tub) PHILADELPHIA Cream Cheese Spread
1/2 tsp. zest and 1 Tbsp. juice from 1 lemon
1/4 tsp. garlic powder
1/8 tsp. black pepper

Steps:

  • Cook and stir bacon in large skillet on medium heat until crisp. Remove bacon from skillet with slotted spoon; drain on paper towels. Discard all but 1 Tbsp. drippings from skillet.
  • Add chicken to reserved drippings; cook 2 min. on each side or until each breast is lightly browned on both sides. Remove from skillet; set aside. Add vegetables to skillet; cook 3 min. or until tender, stirring frequently. Add flour; cook and stir 1 min. Stir in broth and water; bring to boil, stirring frequently.
  • Spoon vegetables to edge of skillet. Add noodles to center of skillet; press with back of spoon to completely cover noodles with broth. Top with chicken; cover. Simmer 7 to 8 min. or until chicken is done (165ºF), noodles are tender and sauce is thickened, stirring after 4 min. to combine sauce ingredients.

2 ⅓ cups chicken broth (divided)
2 cups carrots (diced)
1 bay leaf
1 fresh sprig thyme (or 1 teaspoon dried thyme)
1 teaspoon salt
1 teaspoon pepper
1 cup celery (diced)
1 cup onion (diced)
2 tablespoon garlic (minced)
1 pound dry wide noodles
2 cups milk (divided)
3 tablespoons all purpose flour
1 cup peas (frozen)
2 tablespoon fresh parsley

Steps:

  • In a large pot over medium high heat, cook carrots with 1 ½ cup broth, 1 bay leaf, salt, pepper, and dried or fresh thyme until carrots are tender.
  • Add into the pot the remaining chicken broth, celery, onion and garlic and let come to a boil.
  • Next add the dry wide noodles to the pot and cook for 5 minutes uncovered.
  • Then after 5 minutes stir in 1 cup of milk and the frozen peas.

I think I saw this in Cooking Light - the library's copier was broken, so I scribbled down the ingredients and directions on a slip of paper. I don't usually have celery, so used green beans and added a teaspoonful or so of dry celery leaves for flavor. I've also made it with leftover chicken, added mushrooms, used fresh herbs or different herbs, and made other changes on the fly. I love that it makes a small quantity for those of us with small households. Update: I recently served this over hot cooked noodles, and that was another nice way to have this dish.

1 garlic clove, minced
1 tablespoon lime juice (about 1/2 fresh lime)
1 tablespoon fish sauce
1/2 tablespoon soy sauce
1 tablespoon brown sugar
1/2 tablespoon vegetable oil
1/2 stalk lemongrass, white part only cut into 2 pieces and smashed
1 1/2 tablespoons fish sauce
2 tablespoons cups rice vinegar
1 tablespoon white sugar
1/4 cup water
1 garlic clove, finely chopped
1/2 red birdseye chili (or adjust quantity to your taste) or 1/2 jalapeno pepper, finely chopped (or adjust quantity to your taste)
1 1/2 tablespoons lime juice
