1 (10 ounce) package frozen chopped spinach, thawed, well drained
1 ¼ cups KRAFT Shredded Low-Moisture Part-Skim Mozzarella Cheese, divided
6 tablespoons KRAFT Grated Parmesan Cheese, divided
6 small boneless, skinless chicken breast halves, pounded to 1/4-inch thickness
1 egg
10 RITZ Crackers, crushed
1 ½ cups spaghetti sauce, heated

Steps:

  • Heat oven to 375 degrees F. Mix cream cheese, spinach, 1 cup mozzarella and 3 Tbsp. Parmesan until well blended; spread onto chicken breasts. Starting at one short end of each breast, roll up chicken tightly. Secure with wooden toothpicks, if desired. Set aside.
  • Beat egg in shallow dish. Mix remaining Parmesan and cracker crumbs in separate shallow dish. Dip chicken bundles in egg, then roll in crumb mixture. Place, seam-sides down, in 13x9-inch baking dish sprayed with cooking spray.

4 ounces fat free cream cheese (softened)
1 (10 ounce) package frozen chopped spinach (thawed and drained)
1 1/2 cups shredded Mozzarella cheese (divided)
1/4 cup grated Parmesan cheese
4 boneless skinless chicken breasts
2 eggs
20 Ritz crackers (crushed)
1 cup marinara sauce

Steps:

  • Preheat oven to 375 degrees F.
  • In a mixing bowl. Combine softened cream cheese, drained spinach, 1 cup Mozzarella, and Parmesan cheese.
  • Season with salt and pepper, to taste.
  • Cut each chicken breast in half to make them around 1/4-inch thick.
  • Place a few tablespoons of spinach mixture on the widest end of each chicken breast.
  • Roll up and secure closed with toothpicks; set aside.
  • In a small mixing bowl, whisk eggs; set aside.

I found this recipe years ago and adjusted the ingredients to my own taste and my family and friends love it. I think I'm going to make it again this week end. It's been a while since we've had it. Really good tasting!

4 oz (1/2 of 8 ounce package) cream cheese, softened
1 1/4 c shredded low0moisture part-skim mozzarella cheese, devided
1 pkg (10 ounce) brozen chopped spinach, thawed and well drained
6 Tbsp grated parmesan cheese, divided
6 small boneless skinless chicken brest halves (1 1/2 pounds), pounded to 1/4 inch thickness
1 egg
10 ritz cracker, crushed (about 1/2 cup)
1 1/2 c of your favorite spaghetti sauce, heated

Steps:

  • 1. Preheat your oven to 375.
  • 2. Meanwhile, mix chream cheese, spinach, 1 cup mozzarella and 3 tablespoons of parmesan unti well blended and set aside.
  • 3. Place the chicken breast one at a time between two sheets of plastic wrap and pound down to 1/4 inch thickness.
  • 4. When finished with all six chicken breast lay them flat and spread mixture onto each breast.
  • 5. Start at one short end of each breast and roll up chicken tightly and secure with a wooden toothpick if desired and set aside.
  • 6. In a shallow dish, beat eggs.
  • 7. Mix remaining parmesan and cracker crumbs in separate shallow dish.

  • 9. Place seam-sides down in a 13 X 9 inch baking dish that has been sprayed with cooking spray.
