Steps:

1 cup milk

1 package (16 ounces) penne pasta
1 pound boneless skinless chicken breasts, cubed
1/8 teaspoon salt
1/8 teaspoon pepper
2 tablespoons olive oil, divided
2 medium carrots, finely chopped
2 celery ribs, finely chopped
3/4 cup finely chopped red onion
4 garlic cloves, minced
3/4 cup blue cheese salad dressing
3/4 cup mayonnaise
1/2 cup Louisiana-style hot sauce
1-1/2 cups shredded Swiss cheese
1/2 cup dry bread crumbs
3 tablespoons butter, melted

Steps:

  • Cook pasta according to package directions. , Meanwhile, sprinkle chicken with salt and pepper. In a large skillet, saute chicken in 1 tablespoon oil until no longer pink. Remove from skillet. In same skillet, saute carrots, celery and onion in remaining oil until tender. Add garlic; cook 1 minute longer. Remove from heat., Preheat oven to 350°. Stir in salad dressing, mayonnaise and hot sauce into skillet. Drain pasta. Add pasta and chicken to skillet; toss to coat. Transfer to a greased 13x9-in. baking dish. 6 oz fresh baby spinach

1/2 c chopped onion
1/4 c all purpose flour
32 oz chicken broth
16 oz penne pasta
3 c shredded rotisserie chicken

1 c roasted red pepper (comes in jar) drained & cut in 1/4 in strips
1 T Dijon mustard

  • Preheat oven to 350. Spray 13x9 baking dish with cooking spray. In lg pan, melt butter over med heat. Add spinach; cook, stirring occasionally just until wilted. Remove from pan & set aside. 1 tablespoon olive oil
1 cup finely chopped onion (about 1 medium)
1 (10 ounce) package frozen chopped spinach, thawed (I used 10 oz. fresh baby spinach leaves, chopped)
3 cups cubed cooked chicken breasts (I used chopped rotisserie chicken from the grocery deli)
1 (14 1/2 ounce) can Italian-style diced tomatoes, undrained
1 (8 ounce) container chive & onion cream cheese
1/2 teaspoon salt

1 1/2 cups shredded mozzarella cheese

Steps:

  • Prepare rigatoni acoording to package directions.
  • Meanwhile, spread oil on bottom of an 11x7" baking dish; add onion in a single layer. Bake at 375 degrees for 15 minutes or just until tender. Transfer onion to a large bowl and set aside.

1 ounce dried porcini mushrooms
olive oil
4 chicken thighs, boned, skinned and cut into bite-sized pieces
sea salt & freshly ground black pepper
2 garlic cloves, peeled and finely sliced
12 ounces mixed fresh mushrooms, cleaned and torn
7/8 cup white wine
1 lb dried spaghetti
2 cups heavy cream
7 ounces parmesan cheese, grated
1 sprig fresh basil, leaves picked

Steps:

  • Preheat the oven to 400ºF. Put your porcini mushrooms in a bowl and pour over just enough boiling water to cover them (approx. 2/3 cup). Put to one side to soak for a few minutes.
  • Heat a saucepan big enough to hold all the ingredients, and pour in a splash of olive oil. Season the chicken pieces with salt and pepper and brown them gently in the oil.
  • Strain the porcini, reserving the soaking water, and add them to the pan with the garlic and fresh mushrooms. Add the wine, with the strained porcini soaking water, and turn the heat down.
  • Simmer gently until the chicken pieces are cooked through and the wine has reduced a little.
  • Meanwhile, cook the spaghetti in plenty of boiling salted water according to the packet instructions and drain well.
  • Add the cream to the pan of chicken, then bring to the boil and turn the heat off. Season well with salt and freshly ground black pepper.
  • Add the drained spaghetti to the creamy chicken sauce and toss well. Add three-quarters of the Parmesan and all of the basil and stir well.
  • Transfer to an ovenproof baking dish or non-stick pan, sprinkle with half the remaining cheese and bake in the oven until golden brown, bubbling and crisp.
  • Divide between your plates, drizzle with extra virgin olive oil and sprinkle with the rest of the cheese before serving.
