½ cup dry white wine
3 cloves garlic, minced, or more to taste
1 lemon, zested and juiced, divided

1 teaspoon dried thyme
½ teaspoon crushed red pepper, or to taste
salt and ground black pepper to taste
¾ cup grated Parmesan cheese, divided

CHICKEN BACON RANCH SALAD

Chicken Bacon Ranch Salad image

I always seem to have leftover cooked chicken. This simple, tasty salad is a great use of your leftover chicken, either white meat, dark meat, or a combination! Romaine lettuce, cooked chicken, avocado, and cherry tomatoes combine with ranch dressing, and everything is topped off with crunchy bacon. Use purchased ranch salad dressing, or stir up one of the buttermilk dressing recipes on the site. Enjoy for a hearty lunch with some crackers, or for dinner, with a crusty bread. This recipe is proportioned for one person, but it's easy to double or triple for your needs.

MANDARIN CHICKEN PASTA SALAD

Mandarin Chicken Pasta Salad image

I had this at a party and couldn't get it off my mind. It's a fruity Asian chicken salad that even my family's picky eaters enjoy. I bake my own chicken for more flavor, which adds to the prep time, but pre-cooked or canned chicken will also work just fine.

Tips:

  • Use high-quality ingredients. Fresh, flavorful ingredients will make a big difference in the taste of your salad. Look for ripe tomatoes, crisp celery, and tender chicken.
  • Don't overcook the chicken. Overcooked chicken will be dry and tough. Cook it just until it is cooked through, about 10 minutes per side.
  • Use a light hand with the dressing. You don't want the salad to be too heavy or greasy. Start with a small amount of dressing and add more to taste.
  • Let the salad chill before serving. This will allow the flavors to meld and the salad to become more refreshing.
  • Serve the salad with a variety of toppings. This will allow your guests to customize their salads to their liking. Some popular toppings include crumbled bacon, grated Parmesan cheese, and chopped nuts.

Conclusion:

Chicken pasta salad with creamy lemon dressing is a delicious and refreshing dish that is perfect for summer gatherings. It is easy to make and can be tailored to your liking by adding different toppings and dressing. So next time you are looking for a light and flavorful salad, give this recipe a try.
