- Preheat oven to 425 degrees F (220 degrees C). Grease a large baking sheet with sides.
- Place chicken quarters on prepared baking sheet. Stir potatoes, olive oil, juice of 1 lemon, basil, oregano, salt, pepper, and lemon herb seasoning together in a large bowl to coat potatoes. - Preheat oven to 180°C.
- Drain pineapple and reserve the liquid.
- Combine the oil garlic, honey, soy sauce and the reserved pineapple juice - mix well to make a marinade.
- Use 1/2 of the marinade mix to marinate the chicken for 10 minutes.
- Toss the pineapple pieces, onion and the sweet potato with the remaining marinade and place it into a casserole dish. Bake 10 minutes until the potato begins to soften. Bake uncovered.

- 1. Dice and fry the bacon to your liking in a frying pan. While that is happening peel and slice the potatoes into thin slices and place in the base of greased lasagna style dish. Scatter the bacon over the top in an even fashion. Pre-heat oven to 375oF/180oC
