CHICKEN SCHNITZEL WITH WARM POTATO SALAD
Wolfgang Puck says about his weinerschnitzel: "This is a recipe from my childhood, an Austrian classic. It's one of the most popular dishes at Spago where we serve it with mache, frisée, balsamic vinegar and pumpkinseed oil. But for me, it's perfect with just a fingerling potato salad." He modified his weinerschnitzel to chicken for the People Magazine article 'Dinner for 4 under $10", which was published February 22, 2010. Cook/prep time does not include rest time for potatoes. This would pair nicely with an Austrian riesling. Taken from People magazine and posted for ZWT.

Roasted chicken gives this main-course salad plenty of protein, and the chunks of sweet potatoes and shallots are full of potassium. The vinaigrette, made by deglazing the pan with cider vinegar and whisking it together with olive oil, brings the flavors together.

He and the family love it, and it is so easy and so tasty, and it can be served warm or cold. The herbs used can be your choice, I usually use chives, parsley, basil and sometimes oregano.

Tips:
- Boil potatoes until tender: To ensure that the potatoes are cooked through but not overcooked, insert a fork or knife into the center of a potato. If it slides in and out easily, the potato is done.
- Use a variety of vegetables: In addition to potatoes, you can add other vegetables to your salad, such as carrots, celery, peas, or corn. This will make the salad more colorful and nutritious.
- Use a light mayonnaise-based dressing: A light mayonnaise-based dressing will help to keep the salad from becoming too heavy. You can also use a vinaigrette dressing if you prefer.
- Season the salad to taste: Be sure to season the salad with salt and pepper to taste. You can also add other seasonings, such as garlic powder, onion powder, or paprika.
- Chill the salad before serving: Chilling the salad before serving will help to allow the flavors to meld together.
Conclusion:
Chicken potato salad is a delicious and versatile dish that is perfect for potlucks, picnics, and summer gatherings. It is easy to make and can be tailored to your own taste preferences. With a few simple tips, you can make the best chicken potato salad that everyone will love.
