1 bunch watercress, stems removed
1 (11 ounce) can mandarin oranges, drained
2 scallions, sliced
6 tablespoons olive oil
2 tablespoons red wine vinegar

Steps:

  • Preheat oven to 325. Toast pecans for 10-15 minutes.

1/4 cup reduced-sodium teriyaki sauce
2 teaspoons canola oil
8 cups torn mixed salad greens
1 can (11 ounces) mandarin oranges, drained
1 medium carrot, shredded
1/4 cup slivered almonds, toasted
3 tablespoons thinly sliced green onions
DRESSING:
2 tablespoons white vinegar
2 tablespoons olive oil
1 tablespoon reduced-sodium soy sauce
2 teaspoons sugar
1/2 teaspoon ground ginger
1/4 teaspoon salt
1/4 teaspoon pepper

4 Chicken breasts

150 milliliters dry white wine
4 Mandarin orange
500 grams Spinach
4 scallions
60 grams Pecan
4 Tbsps Nut oil
2 Tbsps lemon juice
1 tsp honey

Steps:

  • Rinse chicken breasts, pat dry and season with salt and pepper. Bring white wine to a boil in a saucepan and add chicken breasts. Cook over low heat, covered, until tender for 10-12 minutes.
  • Peel Mandarin oranges thoroughly and cut out segments between white membranes. Collect juice and squeeze out remaining pulp and juice from membranes. Rinse spinach and spin dry. Arrange spinach on a plate. Rinse scallions and cut diagonally into rings.
  • For the dressing, mix orange juice with oil, lemon juice and honey and season with salt. Cut chicken into slices and arrange on spinach. Add Mandarin orange slices, sprinkle with pecans and scallions and drizzle with dressing to serve.

1 can (11 oz.) mandarin oranges, drained
