CHICKEN SATE WITH PEANUT SAUCE

Chicken Sate With Peanut Sauce image

It took me a while to get around to trying this recipe I clipped from Cooking Light, but it is a winner! I will be making again and again. Despite the long list of ingredients, it actually goes together fairly quickly. Both the sauce and the marinade are only mildly spicy.

Time 42m

Yield 4 serving(s)

Number Of Ingredients 21

1/2 cup chopped shallot (about 4)
2 tablespoons dark brown sugar
1 tablespoon minced fresh ginger
1 tablespoon sambal oelek (chile paste with garlic)
1 tablespoon low sodium soy sauce
2 teaspoons coriander seeds
2 teaspoons canola oil
1 teaspoon fish sauce
1/2 teaspoon turmeric
1/2 teaspoon black peppercorns
1 dash of freshly ground nutmeg
4 garlic cloves
2 whole cloves
1 1/2 lbs chicken breast tenders
1/2 cup reduced-fat creamy peanut butter
1/3 cup water
3 tablespoons lime juice
1 tablespoon low sodium soy sauce
2 teaspoons dark brown sugar
1 teaspoon hot paprika
1 teaspoon hot chili sauce (such as Huy Fong Sriracha)

Steps:

  • Preheat broiler.
  • To prepare sate, place first 13 ingredients in a food processor and process until smooth. Place shallot mixture and chicken in a large zip-top plastic bag. Seal and marinate in refrigerator 10 minutes.
  • To prepare peanut sauce, combine peanut butter with next 6 ingredients (through Sriracha) in a medium bowl; stir well with a whisk. (I found it was much easier to mix together after I microwaved for about 45 seconds to soften the peanut butter a little).
  • Remove chicken from bag and discard marinade. Thread chicken on 8 (12-inch) wooden skewers. Place skewers on the rack of a broiler or roasting pan coated with cooking spray. Broil 12 minutes or until done, turning once or twice as needed.
  • Serve with peanut sauce.

Categories     Chicken     Appetizer     Low Cal     Peanut     Summer     Gourmet     Dairy Free     Wheat/Gluten-Free     Tree Nut Free     Soy Free     No Sugar Added     Kosher

Yield Makes about 32 satés

Number Of Ingredients 9

2 whole skinless boneless chicken breasts (about 1 1/4 pounds)
about thirty-two 7-inch bamboo skewers, soaked in water to cover for 15 minutes
For the marinade:
3/4 cup sweetened flaked coconut
2 teaspoons chopped peeled fresh gingerroot
2 teaspoons curry powder
2 tablespoons fresh lime juice
1/2 cup hot water
Dipping Sauce

Steps:

  • Cut the chicken lengthwise into 1/4-inch-thick slices, thread the slices lengthwise onto the skewers, and season them with salt and pepper.
  • Make the marinade:
  • In a blender blend together the coconut, the gingerroot, the curry powder, the lime juice, and the hot water until the mixture is smooth, strain the mixture through a fine sieve into a bowl, pressing hard on the solids, and let the marinade cool. The marinade may be made 2 days in advance and kept covered and chilled.
  • In a large shallow dish pour the marinade over the chicken, coating the chicken well, and let the chicken marinate, covered and chilled, for at least 1 hour and up to 3 hours. (Do not let the chicken marinate longer or the meat will break down.)
  • Make the dipping sauce.
  • Grill the chicken with the marinade clinging to it on an oiled rack set 5 to 6 inches over glowing coals for 1 1/2 minutes on each side, or until it is cooked through, and serve the satés with the dipping sauce.

Tips:

  • For the best flavor, use fresh chicken thighs or breasts. Boneless, skinless chicken thighs are a good choice because they are juicy and flavorful.
  • To make sure the chicken is cooked through, use a meat thermometer to check that the internal temperature has reached 165°F (74°C).
  • If you don't have a bamboo skewer, you can use metal skewers. Just be sure to soak them in water for 30 minutes before using to prevent them from burning.
  • To make the peanut sauce ahead of time, simply store it in an airtight container in the refrigerator for up to 3 days. When you're ready to serve, just reheat it over low heat until warmed through.
  • Serve the chicken satay with your favorite dipping sauce. Some popular choices include peanut sauce, sweet and sour sauce, or hoisin sauce.
