5 links precooked apple chicken sausage, sliced into rounds
2 sweet potatoes, diced
2 apples, diced
¼ cup water
¼ cup brown sugar
½ teaspoon ground cinnamon
¼ teaspoon salt
1 pinch ground black pepper

Steps:

  • Heat oil in a large, deep skillet over medium-high heat. Add sausage slices and cook until browned, about 5 minutes. Remove sausage and set aside.
  • Add sweet potatoes and half the water to the skillet; boil for 5 minutes. Stir in the sausage, apples, remaining water, sugar, and cinnamon. Season with salt and pepper; reduce heat to medium. Cover and cook, stirring occasionally, until potatoes are soft, 10 to 15 minutes. Serve hot.

1/2 pound boneless skinless chicken breasts, cubed
1/2 teaspoon dried thyme, divided
1/4 teaspoon pepper, divided
1-1/2 teaspoons canola oil
1/4 pound smoked turkey kielbasa, cut into 1/4-inch slices
1 small onion, finely chopped
1 small green pepper, finely chopped
2 garlic cloves, minced
2 cups water
1 cup uncooked long grain rice
1/2 teaspoon reduced-sodium chicken bouillon granules
1/2 teaspoon hot pepper sauce

Steps:

  • Sprinkle chicken with 1/4 teaspoon thyme and 1/8 teaspoon pepper. In a large nonstick skillet, saute chicken in oil until no longer pink. Remove and keep warm. , In the same skillet, saute the kielbasa, onion and green pepper until vegetables are tender. Add garlic; cook 1 minute longer. Stir in the water, rice, bouillon, hot pepper sauce, and remaining thyme and pepper. Bring to a boil. 8 ounces ricotta cheese gnocchi
2 cups broccoli florets
1 teaspoon butter
2 tablespoons diced onion, divided
1 tablespoon minced garlic, divided
2 chicken sausage links (such as Aidells®), sliced
½ cup butter
2 teaspoons all-purpose flour
salt and ground black pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook gnocchi in the boiling water until they float to the top, 2 to 4 minutes. Drain.
  • Place a steamer insert into a saucepan and fill with water to just below the bottom of the steamer. Bring water to a boil. Add broccoli, cover, and steam until tender, 4 to 5 minutes. Drain and keep warm.

1 medium green pepper, thinly sliced
1 cup sliced fresh mushrooms
1 cup sliced zucchini
2 tablespoons olive oil

1 pound fresh asparagus, trimmed and cut into 1/2-inch pieces
2 garlic cloves, minced
