Categories     Dinner     Main Course

Number Of Ingredients 7

8 chicken sausages (I used fresh Chicken Basil Feta sausages from my local market)
4 medium potatoes (I love a combination of russet and sweet potato, peeled and cut in large chunks)
1 lb brussels sprouts (trimmed and halved)
1 fennel bulb (thinly sliced)
olive oil
kosher salt (to taste)
freshly ground pepper (to taste)

Steps:

  • Preheat your oven to 425 degrees F.
  • Place the sausages in a roasting pan or two large cast iron skillets. Drizzle lightly with olive oil and toss. Place the roasting pan in the oven and let it roast, rotating the sausages periodically, for about 10 minutes.
  • Toss the potatoes in a bowl with a little more olive oil and season with salt and pepper. Add to the sausages and continue roasting for another 25 minutes. Stir periodically.
  • Combine the brussels sprouts and fennel in bowl, lightly drizzle with a little more olive oil, and season lightly with salt and pepper. Add the vegetables to the roasting pan, stirring it into the sausages and potatoes, and continue roasting, stirring periodically, for another 15 minutes, or until the brussels sprouts begin to crisp on the outside and are just fork tender and brilliant green.
  • Serve immediately.

ROASTED CHICKEN SAUSAGE AND POTATOES

Roasted Chicken Sausage and Potatoes image

Fresh rosemary gives plenty of flavor to both potatoes and sausage in this roasted chicken, sausage, and potatoes dish. Rosemary is a very aromatic herb, so you need to use only a little; refrigerate the rest of the bunch in a sealed plastic bag, up to one week.

CHICKEN, SAUSAGE, PEPPERS, AND POTATOES

Chicken, Sausage, Peppers, and Potatoes image

You'll need a large, heavy-duty roasting pan (or a couple of smaller ones) and a very hot oven for this delicious dish. The long oven time makes everything beautifully caramelized and the chicken fork tender.

Time 1h30m

Yield 6

Number Of Ingredients 11

4 large links hot Italian sausage
2 tablespoons olive oil, divided
6 bone-in, skin on chicken thighs
½ pound assorted sweet peppers, seeded
1 small red onion, sliced
½ yellow onion, sliced
4 large Yukon Gold potatoes, quartered
2 teaspoons dried Italian herbs
2 teaspoons kosher salt, plus more as needed
Freshly ground black pepper to taste
1 tablespoon Chopped fresh Italian parsley

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Heat olive oil in a skillet over medium heat. Cook sausage links until browned and oil begins to render, about 3 minutes per side. While sausages are cooking, pierce them lightly here and there with the tip of a sharp knife so some fats and juices are released. Remove from heat and let cool slightly.
  • When sausages are cool enough to handle, cut them into serving pieces, about 2-inch slices. Transfer back to pan along with any accumulated juices from the cutting board.
  • Cut two slashes down to the bone on the skin side of each chicken thigh.
  • Depending on the size of the peppers, halve or quarter them and place in a large mixing bowl. Add the sliced red and yellow onions and potato chunks. Add chicken thighs and sausage pieces with pan juices.
  • Season with kosher salt, black pepper, and Italian herbs. Drizzle with a tablespoon of olive oil.
  • Mix with your hands until all ingredients are coated in oil, 3 or 4 minutes. Transfer to large, heavy-duty roasting pan. Evenly space the chicken thighs skin side up. Position potatoes near the top.
  • Place in preheated oven until chicken is cooked through and everything is caramelized, about 1 hour. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Sprinkle with chopped fresh Italian parsley, if desired.

SHEET-PAN SAUSAGES AND BRUSSELS SPROUTS WITH HONEY MUSTARD

Sheet-Pan Sausages and Brussels Sprouts With Honey Mustard image

This hearty pan of sticky, honey mustard-glazed sausages, brussels sprouts and potatoes only adds to the argument that sheet-pan dinners make the best weeknight meals. As the sausages roast, they yield a delicious fat that coats and seasons the caramelized vegetables. Use any fresh sausage you like, as long as it pairs well with the honey mustard. Feel free to substitute or add other vegetables like squash, cherry tomatoes, broccoli, carrots or cabbage. The mustard seeds and nuts provide texture and crunch, but leave them out if you prefer.

Time 30m

Yield 4 servings

Number Of Ingredients 9

1 pound fresh sausage, such as sweet or hot Italian, or bratwurst
1 pound brussels sprouts, trimmed and halved lengthwise
1 pound small potatoes, like baby Yukon gold or red potatoes, halved
2 tablespoons extra-virgin olive oil, plus more as needed
Kosher salt and black pepper
4 teaspoons honey
1 tablespoon Dijon mustard
1 tablespoon yellow mustard seeds (optional)
1/4 cup almonds or walnuts, chopped (optional)

Steps:

  • Heat oven to 450 degrees, and place a sheet pan in the oven. Score the sausages in a few places on both sides, making sure not to cut all the way through. Transfer to a large bowl with the brussels sprouts, potatoes and 2 tablespoons olive oil, and stir until coated. (If the mixture seems dry, add a little more oil.) Season with salt and pepper.
  • Spread the mixture in an even layer on the heated baking sheet, and arrange the vegetables cut-sides down. Roast 15 minutes, until the brussels sprouts and potatoes start to soften. (The sausages will not be cooked through yet.)
  • Meanwhile, in a small bowl, stir together the honey, mustard and mustard seeds, if using.
  • Drizzle the honey mustard over the sausages and vegetables, and toss or shake to coat. Flip the sausages. Sprinkle with almonds, if using. Roast until the sausages are cooked through and the vegetables are golden and tender, another 10 minutes or so. Season to taste with salt and pepper.

Tips:

  • Choose the right sausage: Not all sausages are created equal. For this recipe, look for a chicken sausage that is flavorful and has a good amount of fat. This will help to keep the sausage moist and juicy during roasting.
  • Use a variety of potatoes: This recipe calls for a combination of Yukon Gold and baby potatoes. The Yukon Golds will provide a creamy texture, while the baby potatoes will add a bit of crunch. You can also use other types of potatoes, such as russet or red potatoes.
  • Roast the vegetables until they are tender and caramelized: The key to getting perfectly roasted vegetables is to roast them until they are tender and slightly caramelized. This will bring out their natural sweetness and flavor.
  • Use fresh herbs: Fresh herbs, such as thyme and rosemary, add a lot of flavor to this dish. If you don't have any fresh herbs on hand, you can use dried herbs, but be sure to use half the amount.
  • Serve immediately: This dish is best served immediately after it is roasted. The sausage and vegetables will be at their best when they are hot and crispy.

Conclusion:

This chicken sausage recipe with roasted potatoes and Brussels sprouts is a delicious and easy-to-make meal that is perfect for a weeknight dinner. The sausage and vegetables are roasted together in a single pan, which makes for easy cleanup. This dish is also a great way to get your daily dose of fruits and vegetables.
