2 teaspoons olive oil
1 tablespoon lemon juice
1 teaspoon dried oregano
1/4 teaspoon salt
1/4 teaspoon pepper
1 1/4 lbs chicken tenderloins (8)
5 large ripe plum tomatoes
nonstick cooking spray
1/4 cup sliced scallion
1/4 cup mint
1 small jalapeno pepper, seeded and minced
1 teaspoon garlic, minced
1/4 teaspoon salt

Steps:

  • For the skewers: Heat outdoor grill. Mix ingredients in a plastic food bag and seal. Marinate for 15 minutes. Have ready 8 skewers.
  • For the salsa: Coat tomatoes with nonstick spray. Grill, turning, for 5 minutes or until the skins are charred. Remove to a bowl; mash until almost smooth. Stir in rest of ingredients.

1/3 cup molasses
1/3 cup red wine vinegar
5 tablespoons Worcestershire sauce
2 tablespoons olive oil
2 tablespoons light brown sugar
2 chipotle peppers in adobo, chopped (or 2 teaspoons hot sauce)
3 pounds boneless skinless chicken breast or thigh meat, cut lengthwise into 1-inch wide strips
36 to 40 (6-inch) wooden skewers

Steps:

  • Combine everything except chicken and skewers in a large nonreactive bowl and whisk to combine. Add chicken strips and toss to coat. Cover and marinate at least 45 minutes and up to 4 hours.
  • When ready to cook, heat oven to 425 degrees F and arrange a rack in the middle. Remove chicken from marinade (reserving marinade) and thread 1 piece of chicken on each skewer.
  • Heat the reserved marinade to boiling and boil for 3 minutes. Cool a bit before using.
  • Arrange skewers on a foil-lined baking sheet in a single layer. Bake for 10 minutes, flip skewers and baste with remaining marinade (you don't need to use it all). Bake about 5 more minutes, until golden brown on both sides.

2 tbsp masala paste
handful of coriander leaves, chopped, plus extra leaves to serve

wholemeal chapatis , to serve
250g pack cherry tomatoes , hulled or quartered
1 red onion , finely chopped
1 cucumber , cut into chunks

  • In a large bowl mix the yogurt, paste, half the chopped coriander, half the lime juice and all the the zest. Tip in the chicken, stir to coat and leave in the fridge to marinate for 30 mins if you have time.

1 pound boneless skinless chicken breasts
1/4 cup olive oil
1/4 cup reduced-sodium soy sauce
2 garlic cloves, minced
1/8 teaspoon pepper
SAUCE:
2 teaspoons butter
2 tablespoons chopped seeded jalapeno pepper
1 teaspoon minced fresh gingerroot
3/4 cup orange marmalade
1 tablespoon lime juice
1 tablespoon thawed orange juice concentrate
1/4 teaspoon salt

Steps:

  • Pound chicken breasts with a meat mallet to 1/4-in. thickness; cut lengthwise into 1-in.-wide strips. In a large resealable plastic bag, combine oil, soy sauce, garlic and pepper. Add chicken; seal bag and turn to coat. Refrigerate 4 hours or overnight., In a small saucepan, heat butter over medium-high heat. Add jalapeno; cook and stir until tender. 6 boneless, skinless chicken thighs (about 500g/1lb 2oz)
2 tbsp olive oil
1 tsp fennel seed , crushed
1 tsp ground cumin
1 tsp sweet smoked paprika (pimenton)
1 garlic clove , crushed
1 tsp red wine vinegar
smoky aïoli , to serve (see tips below)

Steps:

  • You need 15 skewers: if wooden, soak in water for 10 mins. Cut chicken into 3cm pieces and place in a bowl. Add 1 tbsp olive oil, the spices, garlic and vinegar, toss well and season. You can do this up to a day before and refrigerate.
  • Thread 2-3 pieces on each skewer. Pour remaining oil in a frying pan or rub onto a griddle pan. Get the pan hot and sear the chicken for 3-4 mins on each side - you may have to do this in batches, keeping the cooked skewers warm in a low oven. Serve with smoky aïoli if you like.
