1 (10 ounce) can diced tomatoes with green chile peppers
1 (10.75 ounce) can condensed cream of chicken soup
¾ (8 ounce) package processed cheese, cubed
2 cups chopped cooked chicken breast
½ (4 ounce) jar sliced mushrooms, drained
salt and pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain and return to pot.

6 boneless skinless chicken breast halves (4 ounces each), cut into 1/2 inch strips
3 tablespoons canola oil, divided
1/2 cup julienned green pepper
1/2 cup sliced onion
2 garlic cloves, minced
1 can (14-1/2 ounces) Italian diced tomatoes, undrained
1 can (8 ounces) tomato sauce
1 jar (4-1/2 ounces) sliced mushrooms, drained
1 teaspoon Italian seasoning

1 fryer, skinned and cut into 8 pieces
1 teaspoon garlic salt
1/2 teaspoon fresh ground black pepper
1 tablespoon unsalted butter
2 tablespoons olive oil
1 1/2 cups sliced mixed mushrooms (porcini, portobello, white)
1 1/2 cups sliced onions
1 1/2 cups sliced green peppers
1/2 cup chopped celery
2 cups spaghetti sauce
8 ounces cooked spaghetti
freshly grated parmigiano-reggiano cheese

Steps:

  • Preheat oven to 350 degrees.
  • Heat the oil and butter in a large skillet.
  • Sprinkle the chicken pieces with garlic salt and pepper.
  • Brown the chicken over medium heat, and transfer to a 13 x 9 baking dish.
  • In the same skillet, saute the mushrooms, onions, peppers, and celery, until tender, about 7 minutes.
