Number Of Ingredients 17

1 1/2 -2 cups seasoned, cooked and diced chicken breast meat
1 tablespoon olive oil
1 cup diced onion
1 cup diced red bell pepper
1 banana pepper, diced
Pinch of crushed red pepper flakes
Salt and pepper
1 clove garlic, minced
1 (heaping) TBSP all purpose flour
3/4 cup chicken broth
4 cups fresh baby spinach, stems removed, coarsely chopped
1 (15.5-ounce) can of cannellini beans, drained and rinsed
Cooking spray
Flour tortillas
Shredded cheese (Monterey Jack, cheddar or a combination of the two works well here)
Avocados, diced
Fat free sour cream

Steps:

  • In a large skillet heat olive oil over medium-high heat. Add onion, red bell pepper and banana peppers. Season with the crushed red pepper flakes and salt and pepper. Saute until veggies have softened, 6-8 minutes. Add the garlic and saute for another minute or two. Sprinkle the flour over the veggies and stir to combine. Cook while stirring for several minutes so that the flour loses its raw taste. Whisk in the chicken broth and stir until bubbly and smooth. Add the baby spinach and continue cooking for another minute or two or until spinach has wilted. Stir in the cooked chicken and cannellini beans and remove from heat. Spray a large skillet or griddle with cooking spray. Heat over medium to medium-high heat. Place one tortilla on griddle and spread cheese over tortilla. Spread chicken, bean and spinach mixture over one half of the tortilla. Check underside of tortilla and when browned a bit, flip the half with just cheese over the half with the chicken. Remove from heat and cut into slices. Top with diced avocado and sour cream, if desired. 2 cups shredded or finely chopped deli rotisserie chicken (from 2- to 2 1/2-lb chicken)
1/2 cup chopped red bell pepper
4 medium green onions, thinly sliced (1/4 cup)
1 can (15 oz) Progresso™ black beans, drained, rinsed
1/2 cup cooked white rice
1 package (11.5 oz) Old El Paso™ flour tortillas for burritos (8 tortillas)
3 cups shredded Monterey Jack cheese (12 oz)
Cooking spray
1 teaspoon olive oil
1 cup Old El Paso™ Thick 'n Chunky salsa
1/2 cup sour cream

Steps:

  • In medium bowl, mix chicken, bell pepper, green onions, beans and rice. Top half of each tortilla with 1/2 cup chicken mixture and 1/2 cup of the cheese. Fold other half of each tortilla over filling, press down slightly. Spray top halves of tortillas with cooking spray.
  • Heat 12-inch skillet over medium-low heat. Place 2 filled tortillas at a time, sprayed sides down, in skillet. Cook 4 to 5 minutes, turning once, until golden brown and hot. Cut into wedges. Serve with salsa and sour cream.

8 (6 inch) flour tortillas
1/2 cup prepared pesto sauce
1 cup shredded reduced-fat monterey jack cheese
1 cup leftover diced cooked chicken

Steps:

  • Squeeze excess liquid from the spinach.
  • Place 4 tortillas on a work surfaced.
  • Spread 2 tablespoons pesto on each tortilla.
  • Top with 1/4 cup spinach.
  • Sprinkle each tortilla with 1/4 cup each cheese and chicken.

1 1/2 cups cannellini beans, drained
3 -5 tablespoons olive oil
1 onion, chopped
2 tablespoons fresh minced garlic
1 teaspoon dried chili pepper flakes
1 teaspoon dried thyme (or to taste)
3/4 lb fresh button mushroom, sliced (can use more or less)
1/4 cup sherry wine
4 boneless chicken breasts, skinnless (cut into 1/2-inch slices, can use 5 breasts)
seasoning salt (or use white salt)
pepper
2 tablespoons flour
2 1/4 cups chicken broth
1 lb fresh spinach (cut into about 1/4-inch strips)
1/2 cup whipping cream (unwhipped)
1 tablespoon Dijon mustard (or to taste)
1 teaspoon paprika (optional)
grated parmesan cheese

Steps:

  • In a heavy large pot heat oil over medium.
  • Add in the mushroom slices and cook until all the liquid is evaporated (about 8 minutes).
  • Add in the onions, garlic, dryed pepper flakes and thyme; saute over medium heat for about 5 minutes.
  • Add in sherry; simmer for 2 minutes.
  • Transfer the mixture to a small bowl.
  • Season the chicken strips with seasoning salt and pepper.
  • Add in more oil if neded to the pot.
  • Add in the chicken, stirring until browned.
  • Add in 2 tablespoons flour stir to coat the chicken evenly.
  • Add in the chicken broth with the onion/mushroom mixture; bring to a boil, stirring with a wooden spoon; simmer for about 25 minutes (you can cook a little longer if desired).
  • After about 25 minutes, add in the spinach chopped spinach, whipping cream, mustard and paprika (if using); simmer for about 5 minutes (at this point you can add in about 1/4 cup Parmesan cheese if desired) then season with salt and pepper.
  • Sprinkle with more grated Parmesan cheese, or pass the cheese at the table.
