2 tablespoons olive oil
1 bag (10-ounce) baby spinach
3 cloves garlic (minced)
Salt and freshly ground black pepper (to taste)
2 boneless skinless chicken breast halves (approximately 1 pound, cooked, cooled and diced)
1 can (15-ounce) artichoke hearts (drained, squeezed of excess moisture and chopped)
1 container (6.5-ounce) herb and garlic cheese spread (such as Boursin)
1/2 cup freshly grated Parmesan cheese
1/2 cup mayonnaise
2 tablespoons chopped fresh chives
1 large egg mixed with 1 tablespoon water
2 packages (each 17.3-ounce) puff pastry sheets such as Pepperidge Farm (or 4 sheets)

Steps:

  • Preheat oven to 400 degrees. Thaw puff pastry per package directions.
  • Heat oil in a skillet or saute pan over medium-high heat. Add the baby spinach and cook, 3-4 minutes or until wilted. Stir in garlic and cook 30 seconds more or until fragrant. Transfer baby spinach to a sieve or colander to drain. Gently press on the spinach with a wooden spoon to extract any excess moisture.

1 Tbsp olive oil
1 onion, sliced
6 cloves garlic, crushed
1 bag of baby spinach (130g)
500g cooked chicken breast, chopped
150g feta
2 eggs
12 sheets of filo pastry
2 Tbsp sesame seeds

Steps:

  • Preheat oven to 190.C fanbake.
  • Heat a large frypan over medium heat, add olive oil and sauté sliced onion for 5 minutes until softened. Stir in crushed garlic then add baby spinach.
  • Keep stirring until the spinach has wilted then add the chicken.
  • Turn off the heat and crumble in the feta and then crack in the eggs.
  • Season well with salt and pepper then stir everything to combine.
  • Set aside to cool slightly before wrapping in the filo.
  • Place one sheet of filo onto a board and spray with oil. Layer over another sheet of filo and spray again.
  • Place 1/2 cup of chicken mixture in a line 5cm from one end, fold in the sides and then roll up the filo, spraying oil in between each fold. Roll up the remaining filo parcels. Spray the top with oil and sprinkle over sesame seeds.
  • Bake for 30 minutes until golden and cooked through.
  • Serve hot with a fresh garden salad.

225g fresh spinach , washed
1 tbsp groundnut oil
1 large shallot , finely diced
25g walnuts or pine nut , roughly chopped
75g vegetarian cheddar , grated
pinch freshly grated nutmeg
2 tbsp double cream
1 tsp walnut oil
25g butter , melted
12 squares filo pastry , each measuring 16cm x 16cm

Steps:

  • Heat oven to 190C/fan 170C/gas 5. Place spinach in a pan and stir over a high heat until wilted. Strain, squeeze out as much liquid as possible, then roughly chop.
  • Heat oil in a frying pan, sauté shallot until softened. Add walnuts, then fry for 2-3 mins. Remove from heat, stir in spinach, cheese, nutmeg, cream and seasoning.
  • Mix walnut oil with butter. Brush a thin coating on a piece of pastry. Place another piece on top with corners at a different angle, brush with the butter and repeat with one more piece. Place a spoonful of spinach mix in the centre, bring up corners of pastry and pinch in the middle to form a parcel. Repeat to make remaining parcels, then transfer to a greased baking tray. Brush parcels with remaining butter and oil. Bake for 20 mins until golden.

2 skinless, boneless chicken breast halves - diced
2 medium red bell peppers, chopped
1 large white onion, chopped
3 celery ribs, chopped
2 cups favorite barbeque sauce

Steps:

  • Make four foil packets by the following method, using 1-foot squares of heavy duty aluminum foil: fold square in half and smooth flat. Seal each of the narrow ends by folding over each edge three times to make a 1/4-inch border, smoothing flat after every fold. You should now have a foil packet that is open on one long side. Repeat to form four packets.

1 tablespoon plain flour
150 g spinach, chopped (frozen is OK)
1 tablespoon cracked black pepper
1 cup shallot
1 teaspoon olive oil
1 teaspoon chicken stock powder
200 ml skim evaporated milk
9 sheets phyllo pastry (puff pastry sheets can be substituted)
1/4 cup sesame or 1/4 cup poppy seed

Steps:
