CRAZY CHICKEN - RICE NOODLE STIR-FRY

Crazy Chicken - Rice Noodle Stir-Fry image

This is chef Ming Tsai's take on a traditional Thai dish. It's called crazy because of it's spiciness. You can always decrease the amount of sambal oelek if you don't like dishes too spicy (or increase it if you like it really spicy!). This recipe is perfect for a busy night. It's quick and simple to prepare. If you want to make this a one dish meal, I think you could probably stir-fry in some broccoli or peas, etc. Enjoy!

a sprinkle of garlic powder
½ cup duck sauce
1tlbsp. Soy sauce
½ each red and green bell peppers
1 minced garlic clove
1 tsp. parsley
a sprinkle of oregano
sprinkle of black pepper and salt
1 packet chicken bouillon
½ head of broccoli
½ cup sliced carrots
(optional)
½ yellow squash, sliced thin (optional)
½ can diced pineapple (optional)
Rice: see recipe below

Steps:

  • Pour enough olive oil in a large skillet to cover the bottom of the pan. Turn heat on medium. Slice chicken breasts into thin strips an inch long. Put all of the chicken in the hot skillet. Add garlic powder, parsley, chicken bouillon, oregano, pepper and salt. Cook chicken until all of the pink is gone. Add bell peppers broccoli squash, carrots, pineapple, and garlic. Cook until vegetables are tender, then, stir in duck sauce and soy sauce. Cook until sauce thickens in bottom of pan, then, turn the heat on low and let simmer for 2 minutes. For rice: 1 cup of white rice 2 cups of water Bring water to a boil in a medium saucepan. Turn heat down to low, pour in rice, cover and let cook for 15 minutes. DO NOT STIR!!! Put stir-fry and rice in two separate bowls. Serves about 4 or 5.

Tips:

  • Mise en place: Before you start cooking, make sure you have all your ingredients and utensils ready. This will help you stay organized and prevent any scrambling.
  • Use fresh, high-quality ingredients: The fresher your ingredients, the better your stir-fry will taste. Look for fresh vegetables, tender chicken, and flavorful rice.
  • Cook the chicken in batches: If you overcrowd the pan, the chicken will steam instead of fry. Cook the chicken in batches to ensure that it gets evenly browned.
  • Don't overcook the vegetables: Vegetables should be cooked until they are tender-crisp. Overcooking them will make them mushy and bland.
  • Use a variety of vegetables: Stir-fries are a great way to use up leftover vegetables. Feel free to experiment with different combinations to find your favorite.
  • Add some protein: In addition to chicken, you can also add other proteins to your stir-fry, such as shrimp, beef, or tofu.
  • Season to taste: Stir-fries are typically seasoned with soy sauce, ginger, garlic, and sesame oil. You can adjust the seasonings to your own taste.
  • Serve immediately: Stir-fries are best served immediately after cooking. The vegetables will start to wilt if they sit for too long.

Conclusion:

Chicken stir-fry rice is a quick, easy, and delicious meal that can be made with a variety of ingredients. With a little planning and preparation, you can have a flavorful and healthy stir-fry on the table in no time. So next time you're looking for a quick and easy meal, give chicken stir-fry rice a try.
