1/4 pound bacon strips, cut into thirds
2 medium onions, halved and thinly sliced
2 medium apples, peeled and thinly sliced
1 package (9 ounces) ready-to-serve roasted chicken breast strips
1/4 cup jalapeno pepper jelly
1/2 teaspoon dried thyme
1/4 teaspoon salt
1 sheet frozen puff pastry, thawed
3/4 cup shredded cheddar cheese
1/4 teaspoon pepper
1 tablespoon minced fresh parsley

Steps:

  • Preheat oven to 425°. In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels with a slotted spoon. Saute onions and apples in drippings until tender. Stir in the chicken, jelly, thyme and salt., On a lightly floured surface, unfold puff pastry. Roll into a 10-in. x 9-in. rectangle. Transfer to a 15x10x1-in. parchment-lined baking sheet. Prick with a fork., Spread chicken mixture over pastry to within 1 in. of edges. Sprinkle with cheese and pepper. Press edges with a fork, forming a decorative border., Bake for 10 minutes. 1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
6 boneless skinless chicken breast halves (4 ounces each)
3 tablespoons butter
1 cup water
1 cup fresh or frozen cranberries
1/2 cup packed brown sugar
Dash ground nutmeg
1 tablespoon red wine vinegar, optional
Hot cooked rice

Steps:

  • In a shallow dish, combine flour, salt and pepper; dredge chicken. In a skillet, melt butter over medium heat. Brown the chicken on both sides. Remove and keep warm. , Add water, cranberries, brown sugar, nutmeg and, if desired, vinegar to the pan; cook and stir until the berries burst, about 5 minutes. Return chicken to skillet. Cover and simmer for 20-30 minutes or until chicken is tender, basting occasionally with the sauce. Serve with rice. Freeze option: Place chicken in freezer containers; top with sauce. If desired, place rice in separate freezer containers. Cool and freeze. To use, partially thaw in refrigerator overnight. 4 ounces flour
salt & pepper
1 ounce butter
1 ounce lard
8 ounces chicken, cold, cooked
4 tablespoons cream
1 teaspoon lemon juice
1 pinch dried tarragon

Steps:

  • Sift the flour and a pinch of salt into a bowl.
  • Rub in the butter and lard and mix to a stiff dough with cold water.
  • Roll out the pastry on a floured board and use to line a 8 - 9 inch flan tin.
  • Prick the base, line with foil and fill with dried beans.
  • Bake at 400 F for 15 minutes.
  • Remove the beans and foil, and return the pastry to the oven for another 5 - 15 minutes or until crisp and golden brown.
  • Cut the chicken into small pieces.
  • Put the cream into a small saucepan and heat gently.
  • Add chicken, lemon juice and tarragon, and season well with salt and pepper.
  • Heat gently until the chicken is hot, then turn the filling into the pastry case. Serve with salads.

I've been working on this for an event this weekend, and I played about with it for several days, before I settled on the idea of making it in a tart pan. So,...

Number Of Ingredients 10

PLAN/PURCHASE
1 medium chicken breast, boneless skinless
salt, kosher variety, to taste
black pepper, freshly ground, to taste
1 Tbsp sweet butter, salted, melted
1 pizza crust, homemade if possible, and large enough to fit the bottom of a 9-inch (23cm) tart pan.
4 oz salsa, your favorite, homemade, if possible
3 oz pepper jack cheese, freshly shredded
3 oz colby, or sharp cheddar cheese, freshly shredded
1/4 c black olives, sliced

Steps:

  • 1. PREP/PREPARE
  • 2. Gather your ingredients.
  • 3. Season the chicken breast with a bit of salt and pepper, and sauté in some butter and olive oil over medium heat.
  • 4. Remove from the pan, shred and reserve.
  • 5. Add the melted butter to the bottom of the tart pan.
  • 6. Place in the refrigerator and allow it to cool, about 1 hour.
  • 7. Place a rack in middle position, and preheat the oven to 475 (245c).
  • 8. Remove the tart pan from the fridge, and, place the pizza crust on the bottom of the pan.
  • 9. Chef's Tip: If you want the crust a bit crisper (I do) prebake the crust for about 5 minutes, in the preheated oven.
  • 10. Add the salsa, and spread out evenly.
  • 11. Add the shredded chicken.
  • 12. Add the two cheeses.
  • 13. Top with the black olives.
  • 14. Place in the preheated oven until the cheese is bubbly and beginning to brown, about 12 - 14 minutes.
  • 15. PLATE/PRESENT
  • 16. Cut into slices, and serve while still nice and toasty warm. Enjoy.
  • 17. Keep the faith, and keep cooking.
