TERIYAKI CHICKEN WITH GINGER CHIVE RICE

Teriyaki Chicken With Ginger Chive Rice image

From Australian Better Homes and Gardens. Note: this recipe does not use store bought teriyaki sauce. Cooking time does not include marinating time.

Provided by AmandaInOz

Categories     Chicken

Time 30m

Yield 4 serving(s)

Number Of Ingredients 9

4 (170 g) chicken breasts, skin on
1/4 cup soy sauce
2 tablespoons sake
1 1/2 tablespoons mirin
1 1/2 tablespoons soft brown sugar
3 teaspoons fresh ginger, finely grated
1 1/2 cups long-grain rice
2 tablespoons finely chopped fresh chives
2 tablespoons oil

Steps:

  • Lay the chicken breasts out between 2 sheets of plastic wrap and beat to 1cm thick.
  • Place the soy sauce, sake, mirin, sugar and 1 teaspoon of the ginger in a flat non-metallic dish big enough to fit all the chicken in a single layer and stir until the sugar has dissolved. Add the chicken and turn to coat. Cover and refrigerate for 1 hour, turning once.
  • Bring a large saucepan of water to the boil. Add the rice and cook for 12 minutes, stirring occasionally. Drain. Stir in the chives and the remaining ginger, then cover until ready to serve.
  • Meanwhile, drain the chicken, reserving the marinade. Heat the oil in a large, deep frying pan and cook the chicken, skin-side-down, over medium heat for 4-5 minutes, or until the skin is crisp. Turn and cook the other side for 4 minutes, remove from the pan (the chicken should be not quite cooked).
  • Add the reserved marinade and 1/4 cup water to the pan and scrape up any sediment. Bring to the boil over high heat, then return the chicken (skinside up) with any juices to the pan. Cook for 5-6 minutes, or until just cooked, turning once to coat.
  • Divide the rice among four plates and place the chicken (either whole or sliced on the diagonal) on top. Drizzle with a little sauce, and serve with steamed Asian greens.

GINGER TERIYAKI CHICKEN

Ginger Teriyaki Chicken image

A recipe from the back of a label from a can of LaChoy bean sprouts. The original recipe called for either chicken breast or thighs. We prefer chicken thighs and I often make it with whatever vegetables that we have in the fridge. It also called for serving this over crispy rice noodles, but since I am gluten free this was left out.

Here's what you need: chicken thighs, yellow onion, ginger, garlic, jasmine rice, water, Nakano® Natural Rice Vinegar, soy sauce, kosher salt, scallions, Nakano Natural Rice Vinegar, sugar, chili flakes

Provided by Nakano

Yield 4 Servings

Number Of Ingredients 13

4 chicken thighs, bone-in skin-on
½ yellow onion, diced small
1 piece ginger, grated, 2 in (5 cm)
3 cloves garlic, minced
1 ½ cups jasmine rice, rinsed well
2 ½ cups water
1 tablespoon Nakano® Natural Rice Vinegar
1 tablespoon soy sauce
1 teaspoon kosher salt, plus more for seasoning chicken
6 scallions, thinly sliced
¼ cup Nakano Natural Rice Vinegar
½ teaspoon sugar
¼ teaspoon chili flakes

Steps:

  • Chicken and rice: Season chicken thighs on both sides with kosher salt. Place chicken, skin side down, in a Dutch oven or heavy pot. Turn on heat to medium-low. Let cook for 5 minutes, then increase heat to medium-high and continue cooking until skin is golden brown and chicken thighs easily release from the pan, about 6-8 more minutes. Remove chicken and set aside.
  • In the same pot with the chicken fat over medium-low heat, add onion, ginger, and garlic. Cook, stirring occasionally, until vegetables are softened and translucent, about 8 minutes. Stir in jasmine rice, water, Nakano® Natural Rice Vinegar, soy sauce, and 1 teaspoon kosher salt. Nestle chicken thighs into the rice, skin side up, making sure that the chicken is not fully submerged. Bring to a simmer, then cover pot and reduce heat to low. Cook for 20 minutes, then take pot off the heat and let rest for 10 minutes while making the scallion sauce.
  • Scallion sauce: Combine all ingredients in a small bowl. Stir and use the back of a spoon to press down and lightly crush the scallions.
  • Fluff rice and serve with the chicken and the scallion sauce.
  • Enjoy!

Tips:

  • Mise en place: Before you start cooking, measure and prepare all of your ingredients. This will help you stay organized and prevent you from scrambling later on.
  • Use fresh ingredients: The fresher your ingredients, the better your chicken teriyaki will taste. If possible, use organic or locally-sourced ingredients.
  • Marinate the chicken: Marinating the chicken in the teriyaki sauce for at least 30 minutes (or up to overnight) will help it to absorb the flavors and become more tender.
  • Cook the chicken over medium heat: Cooking the chicken over medium heat will help to prevent it from burning and ensure that it cooks evenly throughout.
  • Don't overcrowd the pan: If you overcrowd the pan, the chicken will not cook evenly and will likely steam instead of fry.
  • Use a nonstick pan: A nonstick pan will help to prevent the chicken from sticking and will make cleanup easier.
  • Serve immediately: Chicken teriyaki is best served immediately after it is cooked. This will ensure that it is hot and crispy.

Conclusion:

Chicken teriyaki is a delicious and easy-to-make dish that is perfect for a quick weeknight meal. With its sweet and savory flavors, chicken teriyaki is sure to please everyone at the table. So next time you're looking for a tasty and satisfying meal, give chicken teriyaki a try!
