1 bunch leftover green asparagus stalks without tips, chopped (about 3/4 cup)
3 leftover broccoli stems, peeled and julienned
1 small onion, thinly sliced
1 bunch scallions, chopped (about 1 cup)
One 1-inch piece ginger, peeled and grated
2 cloves garlic, grated

Tips:

  • Prep your ingredients: Before you start cooking, wash and chop your vegetables, and marinate or season your chicken if desired. This will save you time and ensure that everything cooks evenly.
  • Use a large skillet or wok: This will give you plenty of room to stir-fry the chicken and vegetables without overcrowding the pan.
  • Heat your pan over medium-high heat: This will help to sear the chicken and vegetables and prevent them from sticking.
  • Add the chicken to the pan first: Cook it until it is browned on all sides, then remove it from the pan and set it aside.
  • Add the vegetables to the pan: Stir-fry them until they are tender-crisp.
