DALE'S WAIKIKI BBQ CHICKEN

Dale's Waikiki BBQ Chicken image

Easy Hawaiian style chicken with a sweet and sour bbq sauce, not much effort at all. Not my original recipe, but I have loved this and have been making it for over 15 years. Thanks to Dale for posting the original.

Provided by Sue L

Categories     Chicken

Time 50m

Number Of Ingredients 9

1 1/2 lb boneless chicken breast
flour, to coat
salt and pepper
cooking oil
8 oz can crushed pineapple, undrained
1 c barbecue sauce
1 Tbsp cornstarch
1/2 tsp ground ginger
1 c pineapple chunks (optional garnish)

Steps:

  • 1. Flatten chicken breast between pieces of wax paper or plastic wrap with a mallet and cut into serving size pieces.
  • 2. Season chicken with salt and black pepper, then dredge in flour, shaking off excess.
  • 3. Heat oil about an inch deep in a large skillet and brown pieces of chicken on both sides and drain.
  • 4. Whisk together the crushed pineapple, bbq sauce, cornstarch and ginger.
  • 5. Place chicken in a clean skillet and cover with sauce. Bring mixture to a boil, then reduce heat, cover and simmer for 25-35 minutes or until chicken is cooked through.
  • 6. Garnish with chinks of pineapple if desired.

Tips:

  • Choose quality chicken: For the best flavor and texture, use bone-in, skin-on chicken breasts or thighs.
  • Make sure the chicken is cooked through: Use a meat thermometer to ensure that the internal temperature of the chicken reaches 165°F (74°C).
  • Use fresh pineapple: Fresh pineapple adds a bright, tropical flavor to the dish. If you don't have fresh pineapple, you can use canned pineapple, but be sure to drain it well.
  • Don't overcook the sauce: The sauce should be thick and flavorful, but not too thick. Cook it just until it has reached the desired consistency.
  • Serve the chicken with rice or noodles: Chicken Waikiki is traditionally served with rice or noodles. You can also serve it with vegetables, such as steamed broccoli or asparagus.

Conclusion:

Chicken Waikiki is a delicious and easy-to-make dish that is perfect for a quick and easy meal. The combination of sweet and savory flavors makes it a favorite among many. With its simple ingredients and quick preparation time, Chicken Waikiki is a great option for busy weeknights or casual gatherings.
