SPINACH, CHICKEN, AND WILD RICE SOUP (SLOW COOKER)

Spinach, Chicken, and Wild Rice Soup (Slow Cooker) image

This soup is easy to throw together. If you don't have pre-cooked chicken, I think it would work to add whole, uncooked chicken breasts at the beginning, then pull them out and cut them up before adding the spinach. From Better Homes & Gardens.

2 cloves garlic, minced
¾ cup wild rice, uncooked
8 cups chicken broth, divided
1 cup grated parmesan cheese, plus more for garnish
1 cup heavy cream
½ cup sour cream
¼ cup fresh parsley

Steps:

  • In a large bowl, combine the chicken thighs with the garlic powder, thyme, dried parsley, salt, pepper, and olive oil. Toss until well coated.
  • In a Dutch oven over medium-high heat, cook the chicken until golden brown, about 5 minutes per side. Transfer the chicken to a cutting board to cool for 5 minutes, then shred with 2 forks into small pieces.

  • Serve warm topped with more Parmesan.
  • Enjoy!

Tips:

  • Use leftover cooked chicken: This is a great way to use up leftover chicken and make a delicious and healthy soup.
  • Cook the rice separately: This will help to prevent the rice from becoming overcooked and mushy.
  • Add vegetables: You can add any vegetables you like to this soup, such as carrots, celery, onions, or broccoli.
  • Use a low-sodium chicken broth: This will help to keep the soup from being too salty.
  • Season to taste: Add salt, pepper, and other seasonings to taste.
  • Serve with a side of crusty bread or crackers: This will help to soak up the delicious broth.

Conclusion:

Chicken wild rice soup with spinach is a delicious, healthy, and easy-to-make soup that is perfect for a weeknight meal. It is also a great way to use up leftover cooked chicken. With a few simple tips, you can make a delicious and flavorful soup that your whole family will enjoy.
