PECAN-CRUSTED STUFFED CHICKEN

Pecan-Crusted Stuffed Chicken image

Provided by Damaris Phillips

Categories     main-dish

Time 1h

Yield 4 servings

Number Of Ingredients 9

Four 8- to 10-ounce boneless, skinless chicken breasts
Kosher salt and coarsely ground black pepper
4 ounces fresh goat cheese, crumbled
1 tablespoon chopped fresh dill, plus sprigs for garnish
1 teaspoon grated orange zest
2 eggs
2/3 cup dried breadcrumbs
2/3 cup ground pecans
Coconut oil spray

Steps:

  • Preheat the oven to 400 degrees F.
  • Place the chicken breasts between two pieces of wax paper or plastic wrap and pound to 1/4-inch thick (a meat mallet or wooden spoon works well). Pat the chicken dry and sprinkle liberally with salt and pepper on both sides. Sprinkle the goat cheese lengthwise on one half of each breast; then sprinkle with dill, orange zest and more salt and pepper. Fold in the short ends--like folding a burrito--then, starting on the half with cheese, roll up into a tight cylinder. Close the seams with toothpicks.
  • Whisk the eggs in a wide, shallow dish. In a separate dish, combine the breadcrumbs and ground pecans. Sprinkle the stuffed chicken with salt and pepper. Dip in the egg mixture and then in the breadcrumb mixture; shake off excess breading.
  • Place the breaded chicken on a wire rack set over a baking sheet and spray with coconut oil. Bake to an internal temperature of 160 degrees F, 15 to 20 minutes. Remove from the oven and let rest for 5 minutes.
  • Remove the toothpicks. Serve garnished with dill sprigs.

BAKED CHICKEN WITH YOGURT CRUST & PEACHES

Provided by Dancer

Categories     Chicken Breast

Time 45m

Yield 2 serving(s)

Number Of Ingredients 5

1 1/2 cups herb-seasoned stuffing cubes
2 whole skinless chicken breasts, each cut in half
1/2 cup plain yogurt
2 large peaches, peeled and halved
to taste cinnamon sugar

Steps:

  • Preheat oven to 375 degrees.
  • In a food processor or blender, reduce the stuffing mix to coarse crumbs. Pour them onto a sheet of wax paper.
  • Coat one piece of chicken breast with yogurt as thickly as possible (admittedly, this is a messy step), then dip it into the crumbs to coat.
  • Lay the chicken in an oiled baking dish large enough to hold chicken and peaches in one layer. Repeat with the remaining chicken.
  • Surround the chicken with the peach halves, cut side down. Sprinkle the peaches (not the chicken) with cinnamon sugar.
  • Bake for 20 minutes, or until the breasts are just cooked through but not dry.

Nutrition Facts : Calories 358.2, Fat 5.3, SaturatedFat 2.1, Cholesterol 144.8, Sodium 181.6, Carbohydrate 17.8, Fiber 2.4, Sugar 16, Protein 58

Tips:

  • Use a variety of peaches. Different types of peaches have different flavors and textures, so using a mix will give your stuffing a more complex flavor and texture.
  • Don't overstuff the chicken. If you stuff the chicken too tightly, it will not cook evenly and the stuffing may become dry.
  • Roast the chicken on a rack. This will allow the air to circulate around the chicken and help it to cook evenly.
  • Baste the chicken with butter or oil during roasting. This will help to keep the chicken moist and flavorful.
  • Let the chicken rest before carving. This will allow the juices to redistribute throughout the chicken, making it more tender and flavorful.

Conclusion:

Chicken with peach stuffing is a delicious and easy-to-make dish that is perfect for any occasion. The combination of sweet peaches, savory chicken, and aromatic herbs creates a flavor that is sure to please everyone. Whether you are serving it for a special occasion or a weeknight dinner, chicken with peach stuffing is guaranteed to be a hit. So next time you are looking for a new and exciting way to cook chicken, try this recipe. You won't be disappointed!
