Chicken Breasts With Tomatoes and Capers image

This recipe was originally developed by Pierre Franey in 1991 for the 60-Minute Gourmet column, a weekly feature dedicated to Times-worthy dishes that were easy, quick and inexpensive. This recipe fit the bill perfectly, and it still does. Just sauté the chicken breasts until they are lightly browned. Then add shallots and garlic, tarragon, tomatoes, vinegar, capers, white wine and tomato paste. Stir well and cook for about 9 minutes more. That's it.

1/3 cup extra-virgin olive oil
Kosher salt
Freshly ground black pepper
1 tablespoon paprika
1 pint grape tomatoes
1 bunch scallions, trimmed
10 whole garlic cloves, unpeeled
5 to 10 leaves basil, chopped
Extra-virgin olive oil, for drizzling
1 tablespoon red wine vinegar
1/4 teaspoon Worcestershire sauce
1 pound spaghetti
1/3 cup chopped flat-leaf parsley
1/4 to 1/2 cup freshly grated Parmesan, optional

  • Position a shelf at the lowest position in the oven and preheat to 450 degrees F.

Add the chickens and coat thoroughly in the mixture, cover and marinate in the refrigerator for up to 1 hour.
  • Remove the chicken from the marinade, discard marinade. Turn the birds breast-side up and fold the wing tips back and under. Season both sides with some salt and pepper and the paprika. • Put the whole grape tomatoes, scallions, garlic cloves, and basil leaves in a large bowl, drizzle with 1 tablespoon of the olive oil and sprinkle with salt and pepper to taste. Turn the vegetables until they are lightly coated. After the chickens have cooked for about 25 minutes, arrange the vegetables around them. Turn the oven to broil and broil until the vegetables are charred, about 10 to 15 minutes. An instant-read thermometer should reach 170 degrees F. Transfer the chicken and vegetables to a cutting board. Pour off all except about 2 tablespoons of chicken fat from the pan and set aside.

  • Squeeze the garlic cloves from their skins, and chop them up with the scallions, once chopped transfer to a bowl and add the charred grape tomatoes, stir to make a chunky relish.
  • Once the chicken is cooked and resting, place the pan you broiled the chicken in on the cook top over medium heat. Add the red wine vinegar, Worcestershire sauce and the reserved pasta cooking water, bring up to a simmer scraping the bottom of the pan with a wooden spoon. Add the cooked spaghetti and chopped parsley, stir to coat and continue to cook for 1 minute. Transfer the spaghetti to a serving bowl.

ROSEMARY CHICKEN WITH TOMATOES AND OLIVES

Rosemary Chicken with Tomatoes and Olives image

A soulful, satisfying main that's inexpensive, relies on basic pantry staples, and is relatively hands-off-now that's a winner. Our Italian-esque chicken supper combines juicy chicken legs with the bold flavors of canned tomatoes and briny olives and capers. The alchemy of acid, salt, and slow heat brings the poultry to fall-off-the-bone perfection, and the gravy is heaven on mashed potatoes or polenta.

Provided by Greg Lofts

Categories     Food & Cooking     Ingredients     Meat & Poultry     Chicken

Time 1h45m

Yield Serves 4 to 6

Number Of Ingredients 12

6 whole chicken legs (3 to 3 1/2 pounds total), patted dry
Kosher salt and freshly ground pepper
2 tablespoons extra-virgin olive oil
1 tablespoon minced garlic (from 2 to 3 cloves)
1 tablespoon capers, drained, or rinsed if salt-packed
1 teaspoon minced anchovies (from 2 to 3 fillets)
3 rosemary sprigs (each 4 inches)
1/4 teaspoon red-pepper flakes
1 can (28 ounces) whole peeled tomatoes in juice, crushed by hand or pulsed a few times in a blender until chunky
1 cup low-sodium chicken broth or water
3/4 cup pitted mixed olives
Mashed potatoes or creamy cooked polenta, for serving (optional)

Steps:

  • Preheat oven to 375°F. Season chicken with salt and pepper. Heat a large ovenproof straight-sided skillet or braiser over medium-high. Swirl in oil. Working in two batches if necessary, add chicken, skin-sides down, and cook, undisturbed, until golden brown and crisp, 6 to 8 minutes. Flip and brown other sides, 4 to 5 minutes more. Transfer to a plate; drain all but 2 tablespoons fat from skillet.
  • Reduce heat to medium. Add garlic, capers, anchovies, rosemary, and red-pepper flakes to skillet. Cook, stirring occasionally, until fragrant, about 1 minute. Add tomatoes and broth; bring to a simmer, scraping any browned bits from bottom of skillet. Continue to simmer until thickened slightly, about 10 minutes. Season to taste. Return chicken to skillet, skin-sides up, along with any accumulated juices and olives.
  • Transfer skillet to oven and braise, uncovered, until chicken is cooked through and liquid is reduced to a thick gravy, 40 to 45 minutes. Remove and discard rosemary. Serve over mashed potatoes or polenta.

SAUTEED CHICKEN WITH WHITE WINE AND TOMATOES

Sauteed Chicken with White Wine and Tomatoes image

Provided by Samuel Chamberlain

Categories     Chicken     Olive     Tomato     Sauté     Dinner     White Wine     Winter

Number Of Ingredients 8

1 4-lb Chicken
1/4 cup olive oil
1 tablespoon onion, finely chopped
1/2 cup dry white wine
4 medium-sized tomatoes, peeled, seeded, chopped coarse
1 clove garlic, chopped adn mashed
1 tablespoon finely minced parsley
12 black Italian olives, pitted

Steps:

  • Have a 4-pound chicken cut into serving pieces, wipe them dry, season them with salt and pepper, and dip them lightly in flour. In a broad sauté or frying pan brown them on all sides in 1/4 cup of hot olive oil. Add 1 tablespoon of finely chopped onion and let it cook slowly until it is golden. Add 1/2 cup of dry white wine and cook until this is reduced by about half. Then add 4 medium-size tomatoes, peeled, seeded, and chopped coarse, 1 small clove of garlic, chopped and mashed, and 1 tablespoon of finely minced parsley. Cover the pan and cook the chicken slowly for 15 to 20 minutes. Five minutes before it is done, add a dozen pitted black Italian olives. Serve with steamed potatoes.

Tips:

  • Choose ripe, flavorful tomatoes. The quality of your tomatoes will greatly impact the flavor of the dish. Look for tomatoes that are deep red and have a slightly sweet smell.
  • Use a good quality wine. The wine you use should be something you would enjoy drinking on its own. A dry red wine, such as a Cabernet Sauvignon or Merlot, is a good choice.
  • Don't overcrowd the pan. When searing the chicken, make sure to give each piece plenty of space so that it can brown evenly. If you overcrowd the pan, the chicken will steam instead of sear.
  • Cook the chicken until it is cooked through. The internal temperature of the chicken should reach 165 degrees Fahrenheit before you remove it from the pan.
  • Let the chicken rest before serving. Allowing the chicken to rest for a few minutes before serving will help the juices redistribute throughout the meat, resulting in a more tender and flavorful dish.

Conclusion:

Chicken with tomatoes and wine is a classic dish that is both flavorful and easy to make. With a few simple ingredients and a little bit of time, you can create a delicious meal that your family and friends will love. This dish is perfect for a weeknight dinner or a special occasion. Serve it with your favorite sides, such as mashed potatoes, roasted vegetables, or a simple salad.
