3 garlic cloves, minced
4 boneless skinless chicken breasts or 8 boneless skinless chicken thighs
2 cups watermelon, in 1/2 inch dice
1 cup mango, in 1/2 inch dice (or canned peaches)

  • Add chicken, seal, and smoosh around to coat.

  • Plate chicken on pre-heated grill coated with cooking spray.
  • Grill 5 minutes on each side, less for thighs, or until cooked through.
  • Serve with salsa.

Tips:

  • Choose ripe watermelon and mango: The sweetness and juiciness of the salsa depend on the quality of the fruits. Make sure to pick ripe, flavorful watermelon and mango.
  • Chop the fruits and vegetables evenly: This will help them cook evenly and ensure a consistent texture in the salsa.
  • Use a sharp knife: This will make chopping the fruits and vegetables easier and prevent them from getting bruised.
  • Don't overcook the chicken: Overcooked chicken can be dry and tough. Cook it just until it is cooked through, about 8-10 minutes per side.
  • Let the salsa chill before serving: This will allow the flavors to meld and develop.

Conclusion:

This chicken with watermelon mango salsa is a refreshing and flavorful dish that is perfect for summer gatherings. The salsa is made with fresh watermelon, mango, red onion, cilantro, and jalapeno, and it has a sweet, tangy, and slightly spicy flavor. The chicken is grilled or pan-fried until tender and juicy, and it is then served with the salsa spooned on top. This dish is sure to be a hit at your next party or barbecue.
