Pebre is a Chilean condiment made from fresh tomatoes, onions, cilantro, garlic, and ají pepper. It is a versatile condiment that can be used to add flavor to a variety of dishes, including grilled meats, fish, and vegetables. Pebre can also be used as a dipping sauce for empanadas, sopaipillas, and other Chilean dishes. While there are many different recipes for pebre, the basic ingredients are always the same. The tomatoes, onions, and cilantro are finely chopped, and the garlic and ají pepper are minced. The ingredients are then combined and seasoned with salt, pepper, and olive oil.

Pebre is a Chilean salsa and is most commonly used on bread. It is also used on meats or anything else you desire. My favorite way to use it is on barbecued tri-tip. You can vary the ingredients to suit your taste.

Chilean Cilantro Salsa (Pebre) image

There are many variations of pebres, mildly hot or very hot, according to taste. This one is adapted from "The South American Table," by Maria Baez Kijac. You can add one finely chopped tomato to the salsa, if you like. Serve in a small bowl with grilled meat, chicken or seafood.

Yield 1 cup

Number Of Ingredients 9

2 medium onions
1 bunch cilantro
3 tablespoons red pepper paste
2 cloves garlic
olive oil
salt
1 tablespoon lime juice
1 tablespoon vinegar
2 tablespoons water

Steps:

  • Cube the onion in small cubes Then add, sugar or salt or hot water and rinse, this is to neutralize the flavor of the onion (a trick often done in Caribean cooking i've found).
  • Chop the cilantro and mix with the onion.
  • Add: hot pepper paste, minced garlic, olive oil, vinegar, lime, water and salt to taste.
  • Mix well and let stand.
  • Serve on bread (Chacarero's sandwhich i posted) or on top of grilled meats.

Tips:

  • Use fresh, ripe ingredients: This will ensure that your pebre is flavorful and vibrant.
  • Chop the ingredients finely: This will help the flavors to blend together more easily.
  • Use a variety of colors: This will make your pebre more visually appealing.
  • Taste the pebre as you make it and adjust the seasoning accordingly: You may need to add more salt, pepper, or lemon juice to taste.
  • Let the pebre sit for at least 30 minutes before serving: This will allow the flavors to meld together.

Conclusion:

Pebre is a delicious and versatile condiment that can be used to add flavor to a variety of dishes. It is easy to make and can be tailored to your own taste preferences. Whether you are using it to top grilled meats, fish, or vegetables, or to add a pop of flavor to your favorite soup or stew, pebre is sure to be a hit.
