1 teaspoon tomato paste
Freshly ground black pepper
1 pound lean ground turkey
One 15-ounce can low-sodium black beans, rinsed and strained
One 15-ounce can no-salt-added diced tomatoes
1/2 cup low-sodium chicken broth
1/2 cup grated Parmesan
1 cup instant polenta
3/4 cup shredded Cheddar
1 tablespoon sliced pickled jalapenos, strained and chopped
Cooking spray
1 cup nonfat Greek yogurt
1 avocado, diced
1/2 cup chopped fresh cilantro
1 cup cherry tomatoes, quartered

Steps:

  • Preheat the oven to 400 degrees F. Heat the olive oil in a large nonstick skillet over medium-high heat. Add the onions and cook, stirring, until soft, about 5 minutes. One 12-ounce bag frozen whole-kernel white shoepeg corn, thawed
1/4 cup vegetable broth
2 tablespoons hot Mexican chili powder
1 teaspoon ground cumin
Salt and freshly ground black pepper
Three 8-ounce boxes cornbread muffin mix (Jiffy preferred)
1 1/2 cups whole milk
1 cup shredded Cheddar (about 4 ounces)
1/4 cup sour cream

  • Preheat the oven to 375 degrees F.
  • In a large skillet over medium heat, heat the oil until shimmering, about 2 minutes. Add the onion and saute until soft, about 5 minutes.
