4 eggs
1/4 cup flour
1 tbsp melted margarine
1/2 tsp baking powder
1/4 tsp salt and pepper
1 cup cream style cottage cheese
1 cup monterery jack cheese, grated

4 oz can chopped green chilies (drained)

Steps:

  • Mix together first six ingredients until smooth, stir in remaining ingredients. Pour into 8x8 pan, bake at 350 for 30 minutes. Let set for 10 minutes and cut into squares.

1 pt cottage cheese
10 eggs
1/2 c flour
1 tsp baking powder
dash of salt (optional)
3 c shredded jack or cheddar, or both
2 4 oz cans of chopped green chiles

Steps:

  • 1. Preheat oven to 350 degrees. Grease 13 x 9 Pan
  • 2. In large mixer bowl beat eggs, stir together flour, baking powder and salt. Add to eggs and mix well; fold in cheese, cottage cheese and chiles. Pour in to greased pan.
  • 3. Bake 40 minutes. Let stand 10 minutes. Cut into small squares.

10 Large eggs
1/2 cup flour
1 tsp. salt
1 tsp. baking powder
several dashes Tabasco
1 stick melted butter
2, 4oz. cans fired roasted green chili peppers
2 cups cottage cheese
1 lbs. jack cheese, shredded

Steps:

  • beat eggs lightly, blend in salt, baking powder, flour and tabasco add cottage cheese and shredded jack cheese and melted butter, Mix until just blended. Gently fold in green chiliies with spatula Pour mixture into a 9 1/2 X 13" baking pan. Bake @ 400 for 15 min. then reduce temp. to 350 and bake for about 40 min. more (test center for doneness, knife should come out clean.) cut into squares serve hot or room temp. can be made ahead and refrigerated over night, just add a few minutes to the cooking time.

1 - 7oz can(s) diced jalapenos (optional)
4 c cheddar cheese, shredded
4 c monterey jack cheese, shredded
15 eggs, beaten
dash monteray steak seasoning
optional: parsley flakes, freeze dried or fresh chives

Steps:

  • 1. Butter or spray a 9X13(or similar size)baking dish
  • 2. Mix the ortega chili's with the Jalapenos and spread half the mixture on the bottom of the baking dish
  • 3. Mix the eggs, cheese and herbs and seasoning together and spread half this mixture over the top of the chili's.
