"Chili con carne," meaning "chili with meat," is a traditional dish that has been enjoyed for centuries. Its origins can be traced back to the Spanish colonizers of Mexico, who brought their own culinary traditions to the region. Over time, the dish was adapted and perfected by the當地 people, resulting in the delectable and hearty stew we know today. As the name suggests, chili con carne is primarily composed of meat, typically beef, simmered in a flavorful broth of spices and various ingredients. This sumptuous dish has become a beloved staple in households worldwide, with countless variations and personal touches passed down from generation to generation. In this article, we will embark on a culinary journey to discover the secrets behind preparing an exceptional chili con carne, following the cherished recipe of my mom.

MOM'S CHILE CON CARNE (KID FRIENDLY)
I've since learned this is not a true Chile con Carne, but that's what my mom always called it. She made this recipe while I was growing up, and I still make it today for my hubby or family. The heat in this can be adjusted by using more or less Chile powder or adding some cayenne pepper for bigger kids with spicier taste buds.

Steps:
- Cook ground beef and onions over medium heat in a large sauce pan or dutch oven until beef is browned and onions are tender. Drain and return to pan.
- Add tomatoes and kidney beans (do not drain off juce).
- Add spices and stir until blended.
- Bring to boil, then reduce to low heat, cover and simmer for 30-45 minutes.
- You can taste and adjust spices after 20-30 minutes - add more chile powder or a bit of cayenne pepper if you like it spicier - let it simmer another 20 minutes to blend flavors.
- Serve in bowls with shredded cheese, onions, sour cream or crackers if desired. I like it with saltines broken into the chile with a little cheese on it.

MOMMY'S ANY DAY CHILI
Like most mothers, my mom had dishes that we could count on having any given week. One of the most loved was certainly her chili--it was meaty, comforting and full of spice. In our house, ground turkey was the go-to for burgers, spaghetti and chili alike. The addition of chorizo to the rich tomato base heightened with red chile sauce gives my mom's version a nuanced taste not often found in many chilis. The final extra-special touch comes from the chili con carne seasoning brick. It adds a layer of creaminess that makes every bite feel like a hug in your mouth.

Steps:
- In a large skillet over medium to medium-high heat, add the oil. Once the oil is shimmering, add the onions and season with pinch of salt. Cook until the onions are translucent, 3 to 5 minutes. Add the garlic, chipotle peppers and tomato paste and sauté until fragrant, about 1 minute. Add the turkey, breaking the meat down using a spatula. Add the dried seasonings--the garlic powder, onion powder, paprika, cumin and ancho chili powder--and 1 to 1 1/2 teaspoons each salt and pepper and mix as you break the meat down more using the spatula. Allow this to cook until all of the meat is browned, 6 to 7 minutes. Transfer the cooked turkey to a medium bowl and set aside.
- Using the same skillet (don't worry about cleaning the skillet out; it's okay for those flavors to also mesh with the chorizo), add the beef chorizo and cook until browned, about 5 minutes. Remove the skillet from the heat and set aside.
- In a large pot, add the chili base, chile sauce and tomato sauce over medium to medium-low heat. Let the brick break down completely, then add the meat mixture and cooked chorizo to the pot. Next, add the crushed tomatoes and chili beans with their liquid and allow to cook until the beans and tomatoes are heated through and the flavors are combined, 30 to 35 minutes over medium to low heat. Serve with sour cream, avocado, Cotija, Cheddar, green onions and corn chips for topping!

Steps:
- Prepare your vegetables. Chop 1 large onion into small dice, about 5mm square. The easiest way to do this is to cut the onion in half from root to tip, peel it and slice each half into thick matchsticks lengthways, not quite cutting all the way to the root end so they are still held together. Slice across the matchsticks into neat dice.
- Cut 1 red pepper in half lengthways, remove stalk and wash the seeds away, then chop. Peel and finely chop 2 garlic cloves.
- Start cooking. Put your pan on the hob over a medium heat. Add 1 tbsp oil and leave it for 1-2 minutes until hot (a little longer for an electric hob).
- Add the onion and cook, stirring fairly frequently, for about 5 minutes, or until the onion is soft, squidgy and slightly translucent.
- Tip in the garlic, red pepper, 1 heaped tsp hot chilli powder or 1 level tbsp mild chilli powder, 1 tsp paprika and 1 tsp ground cumin.
- Give it a good stir, then leave it to cook for another 5 minutes, stirring occasionally.
- Brown 500g lean minced beef. Turn the heat up a bit, add the meat to the pan and break it up with your spoon or spatula. The mix should sizzle a bit when you add the mince.
- Keep stirring and prodding for at least 5 minutes, until all the mince is in uniform, mince-sized lumps and there are no more pink bits. Make sure you keep the heat hot enough for the meat to fry and become brown, rather than just stew.
- Make the sauce. Crumble 1 beef stock cube into 300ml hot water. Pour this into the pan with the mince mixture.
- Add a 400g can of chopped tomatoes. Tip in ½ tsp dried marjoram, 1 tsp sugar and add a good shake of salt and pepper. Squirt in about 2 tbsp tomato purée and stir the sauce well.
- Simmer it gently. Bring the whole thing to the boil, give it a good stir and put a lid on the pan. Turn down the heat until it is gently bubbling and leave it for 20 minutes.
- Check on the pan occasionally to stir it and make sure the sauce doesn't catch on the bottom of the pan or isn't drying out. If it is, add a couple of tablespoons of water and make sure that the heat really is low enough. After simmering gently, the saucy mince mixture should look thick, moist and juicy.
- Drain and rinse a 410g can of red kidney beans in a sieve and stir them into the chilli pot. Bring to the boil again, and gently bubble without the lid for another 10 minutes, adding a little more water if it looks too dry.
- Taste a bit of the chilli and season. It will probably take a lot more seasoning than you think.
- Now replace the lid, turn off the heat and leave your chilli to stand for 10 minutes before serving. This is really important as it allows the flavours to mingle.
- Serve with soured cream and plain boiled long grain rice.

Tips:
- Use a large pot or Dutch oven to allow plenty of space for the chili to simmer and thicken.
- Choose high-quality ground beef for the best flavor. A leaner ground beef will result in a less greasy chili.
- Don't overcrowd the pot when browning the beef. Brown the beef in batches if necessary to prevent it from steaming instead of browning.
- Use a variety of beans in your chili for added texture and flavor. Common beans used in chili include kidney beans, black beans, and pinto beans.
- Add a variety of spices to your chili to create a complex flavor. Common spices used in chili include chili powder, cumin, paprika, and garlic powder.
- Simmer the chili for at least 30 minutes to allow the flavors to meld. The longer you simmer the chili, the better it will taste.
- Serve the chili with your favorite toppings, such as shredded cheese, sour cream, diced onions, and chopped cilantro.
Conclusion:
This classic chili con carne recipe is a hearty and flavorful dish that is perfect for a cold winter day. With its simple ingredients and easy-to-follow instructions, this recipe is sure to become a family favorite. So gather your ingredients and give this recipe a try today!
