1 tablespoon fresh lime juice (from1 small lime), plus lime wedges for garnish
1 teaspoon Thai chili sauce (recommended: Sriracha) or more, to taste
1 tablespoon light brown sugar
2 tablespoons bottled minced garlic or 6 fresh cloves, minced
2 tablespoons ketchup
1 Thai chile, sliced thin or habanero or Scotch bonnet
1/4 cup canola or olive oil
1/4 cup toasted sesame oil
1/4 cup soy sauce
4 to 5 grinds black pepper

Steps:

  • Heat a grill to medium-high heat.
  • Put the shrimp into a glass bowl. Whisk the remaining ingredients in a medium bowl and pour 1/2 to 2/3 if it over the shrimp. (Reserve the remaining marinade to brush on the shrimp during grilling.) Allow the shrimp to marinate for only 8 to 10 minutes or the lime juice will begin to "cook" the shrimp. Grill the shrimp, approximately 2 to 3 minutes per side while brushing with the reserved marinade. I use a silicone brush. Remove the shrimp from the grill to a platter and serve garnished with lime wedges.

1 teaspoon finely shredded lime peel
1/4 tablespoon lime juice (about 1 1/2 limes)
1 jalapeno pepper, seeded and finely minced
1 tablespoon garlic, minced
2 tablespoons low sodium soy sauce
3 tablespoons olive oil
1 teaspoon chili powder
1/4 teaspoon cayenne pepper
2 tablespoons cilantro

1 1/2 lbs medium shrimp (about 6 per person)

Steps:

  • Preheat grill to medium-high.
  • In medium bowl, combine all ingredients except shrimp and stir well.
  • Peel shrimp except for tail, and devein. Rinse and pat dry with paper towels.

1/3 cup lime juice
2 Tbsp chili powder
2 cloves garlic, minced
2 Tbsp Truvia® Natural Sweetener*
1/2 tsp sea salt
1 to 2 lbs raw shrimp
2 to 4 Tbsp red onion, chopped
1 to 2 Tbsp fresh parsley, or cilantro, chopped

Steps:

  • In a small bowl or measuring cup,whisk together the avocado oil, lime juice, chili powder, garlic, Truvia® Natural Sweetener and sea salt.
  • Transfer the raw shrimp to a sealable container or zip lock bag and pour in half of the marinade mixture.Seal, move the bag/container around until all of the shrimp are well coated in marinade, and refrigerate at least 1 hour (or up to 8 hours).

bamboo skewers, soaked for an hour
Marinade for shrimp
1/2 cup fresh lime juice
2 cloves garlic, minced

6 ears grilled corn, kernels shaved from cob

2 tablespoons rice wine vinegar
1 lime, juice and zest only

Incorporate avocado gently into salad, season with salt and pepper to taste, and cover well with plastic wrap lying along the top of the salad surface. Heat grill to 400 degrees F. Skewer the shrimp leaving enough room to handle end of skewer for turning. Season well with salt and pepper. Grill 1-2 minutes per side or until no longer opaque. Do not overcook shrimp as they will dry out and become tough. Arrange shrimp on top of salad. Can be served hot or cold.
