A very refreshing cold soup based on a recipe from a cookbook simply entitled Mediterranean. It has a Middle Easter flavor, unless you use the habanero pepper suggested. It would be great served with fresh flat bread or naan. Cooking time is time to chill.

Tips for Making the Best Chilled Cucumber, Basil, and Mint Soup:

- For the freshest flavor, use cucumbers that are in season and at their peak ripeness. Look for cucumbers that are deep green in color and have firm, unblemished skin. - If you don't have a blender, you can use a food processor or even a regular kitchen knife to chop the cucumbers, basil, and mint. Just be sure to chop them very finely so that they blend well into the soup. - Start with less salt and pepper than you think you'll need, and then add more to taste. Cucumbers can be quite watery, so you don't want to over-season the soup. - If you want a smoother soup, you can strain it through a fine-mesh sieve before serving. This will remove any small bits of cucumber or herbs that might be in the soup. - For a more refreshing soup, chill it for at least 2 hours before serving. You can also serve it over ice cubes. - Garnish the soup with fresh basil, mint, or cucumber slices before serving. This will add a pop of color and freshness to the dish.

Conclusion:

This chilled cucumber, basil, and mint soup is the perfect way to cool down on a hot summer day. It's light, refreshing, and packed with flavor. Plus, it's easy to make and can be tailored to your own taste preferences. So next time you're looking for a quick and easy summer soup, give this recipe a try. You won't be disappointed!
