Tips:

  • Choose the right celery: Select celery stalks that are crisp, firm, and have a bright green color. Avoid stalks that are wilted, bruised, or have yellow or brown spots.
  • Cut the celery properly: Cut the celery stalks into thin strips, about 1/4 inch thick. This will ensure that the celery cooks evenly and quickly.
  • Use a hot wok: A hot wok is essential for stir-frying celery. The high heat will help to sear the celery and prevent it from becoming limp.
  • Don't overcrowd the wok: When stir-frying celery, it is important not to overcrowd the wok. This will prevent the celery from cooking evenly and will make it more likely to become limp.
  • Stir-fry the celery in batches: If you are cooking a large amount of celery, stir-fry it in batches. This will help to ensure that the celery cooks evenly.
  • Season the celery to taste: Once the celery is cooked, season it with salt, pepper, and other seasonings to taste.
