2 skinless, boneless chicken breasts - cooked and cubed
1 cup chicken broth
1 (10.75 ounce) can condensed cream of mushroom soup
1 (5 ounce) can evaporated milk
1 cup sliced almonds
1 (4.5 ounce) can sliced mushrooms, drained
1 (8 ounce) can water chestnuts, drained and minced
1 (5 ounce) can crispy chow mein noodles
⅔ cup shredded Cheddar cheese
1 cup diced celery

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

2 tablespoons vegetable oil
1 lb ground chicken
2 cups chopped celery
1/2 cup chopped onion
1 can mushroom pieces, drained
2 cups frozen mixed peas and carrots
1/4 cup milk
1 can condensed cream of chicken soup
2 tablespoons soy sauce
1 teaspoon salt
1/4 teaspoon pepper
1 teaspoon parsley flakes
3 tablespoons butter or 3 tablespoons margarine
1/3 cup chopped almonds
1 cup dry breadcrumbs

Steps:

  • Fry chicken in oil with celery and onion until chicken is done.
  • Add mushrooms and peas and carrots.
  • Stir in milk and soup.
  • Add soy sauce, salt, pepper, and parsley.
  • Mix well.
  • Pour into 1 1/2 qt casserole.
  • Melt butter.

3 large cooked chicken breasts (already cooked)
2 cups instant cooked rice (or brown)
1 (10 1/2 ounce) can fat-free cream of mushroom soup (undiluted)
1 (1 ounce) envelope onion soup mix
1 cup non-fat soymilk
salt and pepper

Steps:

  • Mix the mushroom soup with the rice then stir in the onion soup. Add the milk and mix.
  • Cut up the chicken in bite size pieces and encoorporate all.
  • Pour in a 9x13 pan that has been sprayed with cooking spray.
  • Sprinkle 1 cup of fat free cheddar cheese on top and bake 375 degrees for 30-45 minutes or until the cheese has melted.
