Time 24m

Yield 2 entree servings or 6 appetiz

Number Of Ingredients 9

1 (4-inch) ball prepared dough, at room temperature
2 tablespoons olive oil
1/4 cup hoisin sauce (available in the Asian section of most grocery stores)
2 grilled skinless, boneless chicken breasts, diced or equivalent amount of store-bought BBQ chicken, or any left-over chicken
4 scallions, finely sliced
2/3 lightly-packed cup cilantro leaves, stems removed before measuring
1/2 red bell pepper, seeds and membranes discarded, sliced into paper-thin strips
1 cup grated mozzarella
Salt and freshly ground pepper

Steps:

  • Sprinkle your rolling surface with a handful of flour or cornmeal. Place dough directly in the middle of the surface. Roll dough out gently 1/4-inch thick, into either a 12-inch rectangle or circle. Brush both sides with olive oil and set aside until ready to grill.
  • Place dough in the center of the cooking grate, directly over the heat for one to three minutes, until the crust is well marked and browned. Flip dough and spread hoisin sauce evenly over cooked side of crust. Spread chicken, scallions, cilantro, and bell pepper evenly over crust. Sprinkle cheese over the top. Move to Indirect heat (for charcoal: the side of charcoal grill that has no coals. For gas: turn off burner directly under pizza). Cover grill and cook for 5 to 10 minutes, or until bottom is well browned, and cheese is fully melted.
  • Remove from grill, season with salt and pepper, and slice. Serve immediately.

CHINESE CHICKEN PIZZA

Chinese Chicken Pizza image

The ingredients may seem unusual, but one bite, and you'll keep coming back for more!! Definitely not the traditional American pizza, very nice when you just want something "a little different". The combination of flavors is extraordinary! I use part-skim mozzarella to keep the fat-content low. Usually serve this with a green salad, but as I think of it, egg rolls would also be a great side! Sometimes I add veggies (onions, green pepper, mushrooms, etc.) before baking. MMM!

Number Of Ingredients 15

3 pkg crescent rolls
3 c chicken, cooked and shredded
5 green onion tops, sliced
1 1/2 lb cream cheese, room temperature
3 Tbsp soy sauce
2 Tbsp sesame oil
1 tsp garlic powder with parsley
3 tsp hot sauce (i use sriracha)
3 c baby spinach, coarsley chopped
3/4 c red bell pepper, diced
1 c carrot, shredded
3/4 c peanuts, coarsely chopped
1 Tbsp sesame seeds, toasted
sweet and sour sauce or duck sauce, optional
1/2 c cilantro, fresh, chopped for garnish

Steps:

  • 1. Preheat oven to 375-degrees. Unroll crescent rolls and piece together on a jelly roll baking sheet. Pinch seams together and season with salt, pepper, garlic powder and sesame seeds. Add cream cheese, soy sauce, sesame oil, garlic powder and hot sauce. Process until mixture is smooth and creamy. Spread cream cheese mixture on prepared crust. Top with spinach, carrots, red pepper, peanuts and sesame seeds. Drizzle with sweet and sour sauce. Cover with plastic wrap and refrigerate for at least two hours. Cut into squares to serve.

Tips:

  • Use a store-bought pizza crust or make your own using a simple recipe.
  • For the chicken topping, use boneless, skinless chicken breasts or thighs, cooked and shredded.
  • To make the sauce, combine soy sauce, hoisin sauce, rice vinegar, sesame oil, and garlic.
  • Top the pizza with mozzarella cheese, cooked chicken, bell peppers, onions, and pineapple.
  • Bake the pizza in a preheated oven at 425°F for 15-20 minutes, or until the crust is golden brown and the cheese is melted and bubbly.
